NUTRITION BARS

Okay....so here's my first recipe post. I hope you find it appetizing!

This is a recipe that my mom used to make for me. These bars are so yummy! I used to ask her to make them for my birthday instead of chocolate cake. That’s how good they are. I decided to make some adjustments to her recipe to make it vegan. I have listed my changes out to the side of the ingredients. The bars turned out just as good the vegan way as I remember them being the other way. If you aren't a vegan then you can enjoy them the traditional way! Either way, they are delicious! Here's the recipe.

1 cup whole wheat flour
1 cup unbleached self rising flour
2 cups brown sugar
1 tsp soda (aluminum free)
2 cups oats
1/3 cup wheat germ
½ cup wheat bran
1 cup raisins (I used ½ cup raisins and ½ cup dried cranberries)
1 cup nuts (I used sliced almonds)
2 sticks butter (I used 1 cup of Earth Balance natural buttery spread)
3 eggs beaten (I used 3 tbs of ground flax seeds mixed with 9 tbs of water)
1 tsp vanilla

Mix all the dry ingredients together in a large bowl with the exception of the ground flax seeds. Whisk together the ground flax seeds and water in a separate bowl. Melt buttery spread in another bowl. Mix flax seed mixture and buttery spread in with the dry ingredients. Pour mixture into a greased (with buttery spread) 9 x 13 pan. Bake in 350 oven for 20 minutes….NO LONGER OR NO LESS. Let them cool for at least 30 minutes before cutting.





This isn't the best picture, but at least you have an idea of what they look like. Maybe seeing them you will want to try them. :o)
