Sunday's dinner and today's lunch was a veggie pasta. It's going to be hard to give the exact recipe for this, because I just pulled stuff out of the refrigerator and started cooking. I will do my best to tell you how I made it though. I thought it was worth sharing, because it turned out very good. :o) Sometimes the best meals are when we just pull foods out of the frig and throw them together .
For this recipe I used:
1/2 sweet yellow onion
1/2 bunch of asparagus
1/2 cup of sliced carrots
1/2 cup broccoli
3/4 cup chopped mushrooms
1 roma tomato
olive oil for sauteing
salt and pepper to taste
about 1 tsp garlic powder
about 1 tbsp soy sauce
1/2 box of wheat linguine
Put the pasta on to cook. While the pasta is cooking, cut up the veggies and saute them in the olive oil with the salt, pepper, and garlic. Once the pasta is done, drain the pasta and pour a little olive oil over it and toss, so it will not stick together. Once the veggies are cooked to your liking, throw in the pasta and add a little more olive oil and the soy sauce. You may want to add a little more salt and pepper once you have added the pasta, I did.
I made a small salad to go with my pasta to complete my meal.

I make a pasta like this one all the time! I call it my "everything but the kitchen sink" pasta, because it is never the same, and I just throw in what I have. Its the BEST way to make a meal out of random leftover veggies!
