Beach Cookies

It's Sunday afternoon....boo! I am not ready for the weekend to be over that's for sure. The weekends are always way too short. I didn't have time to post yesterday. We did house cleaning. Not my favorite thing to do, but we had the opportunity to steam clean our carpets, so that's what we set out to do. Cleaning the carpet was a pretty big job, but it was well worth it. The house feels and looks so much better. It was a job that was way past due!!

Here's a great dessert that you need to try, especially if you like coconut. For dessert Friday I made Chef Chloe's beach cookies. I took my mom a couple to try Saturday afternoon. She'll try about anything and usually eats it whether it's tasty or not. Well, Saturday night she calls to tell me that those were some of the best cookies that she has had in a very long time. Yay for vegan sweets! :o) Here's a couple of pictures of how mine turned out. I believe this would be a guaranteed hit anywhere...vegan or not!
