Oatmeal and Frozen Leftovers

For the last couple of nights we've been eating simple, so I haven’t had any new recipes to post. You know…there comes a time when you have to clean out the fridge…rid it of all those leftovers. Well, that’s what we've been doing the last couple of nights. Hopefully tonight will hold a new recipe. :o)


For breakfast this morning I did try a little something new. I used coconut milk to make my oatmeal. Then I topped it off with almond butter and maple syrup. I wasn’t too sure if the coconut milk would change the taste much or not. It had a slightly different taste, but was still good. The funny part about my breakfast was, after I took a picture of it with my phone, I took my plastic spoon out of the oatmeal and it had curled up from the oatmeal being so hot. I should have taken a picture of the spoon…it was pretty funny.

For lunch today I had some onion rings and leftover frozen Enchilada Casserole that I had fixed a couple of weeks ago. I tell ya, I was not too crazy about the Enchilada Casserole. I was NOT "diggin" it being frozen. I don’t think I’ll be doing that again. I’m not a big fan of freezing foods after they have been cooked. They never seem to taste as good, or good at all, for that matter.
I made up some black bean burgers awhile back and froze some of them to make for an easy lunch. I wasn’t crazy about those either. Freezing the burgers seemed to leave them soggy, and just not very tasty. Maybe I’m not freezing them correctly….I don’t know, but I think the only thing that I can tolerate after it has been frozen is soup. How about you? Do you like frozen leftovers?

  2. I don't normally freeze my leftovers, but I notice that even when I store them in the fridge and re-heat, they get overcooked sometimes, especially vegetables.

    I like that your breakfast is on Vegan with a Vengeance. Awesome!

    I love the spoon story, that was cute. Too bad you didn't take a picture.

    We eat a lot of leftovers, intentionally. I always make large amounts of soup and beans to have on hand. But I agree with you that not all things reheat well. =(

  5. That oatmeal sounds good! I actually really hate leftovers period. I don't think vegan food does well being reheated sometimes.

  6. I freeze everything but I usually freeze the components of dishes and not the assembled dish. I do freeze tons of baked goods once they are cooked though.
