Tomato Bruschetta & Strawberry Banana Smoothie

Last night's dinner mainly consisted of leftovers for me. The new thing for me last night was my little version of tomato bruschetta. We are getting slim on groceries again, and I'm trying to make do with what we have until this weekend. Tony picked some more Romas off our tomato plants yesterday afternoon, so I thought I would make my version of tomato brushetta to go along with our meal. I had some pita bread on hand, so I decided to use that for the bread. I chopped up some fresh Romas and garlic, then added some olive oil. I put the mixture on top of the bread and put it in the oven for about 10 minutes. I don't know why I didn't think about adding basil to it, but that totally slipped my mind until today. There is always next time though. :o) It was still very tasty! I think I could have made a meal out of the brushetta alone.



For breakfast, I of course, had a smoothie. I wonder if I will ever tire of them. Anyway I saw where Ali over at veganepicurean had put 1/4 teaspoon of powdered ginger in her smoothie yesterday, so I decided to try it out this morning. However, I was in a hurry and couldn't remember her measurement, so I just sprinkled some on top of the frozen fruit before I blended it. I did forget to add cinnamon though...darn. I will be sure to do that tomorrow. My smoothie was awesome this morning. There will be a different version of it tomorrow though. :o) Here's what my smoothie consisted of today.

1 1/2 cup frozen strawberries.
1/2 frozen banana
1 tablespoon ground flax seed
1 tablespoon wheat bran
a squirt of agave nectar (sorry, didn't measure it...it was literally a squirt)
enough soy milk to blend

Oh yeah....about the picture, as I said, I was running late this morning, so I waited until I got to work to take a picture. Needless to say, it was half gone by the time I got to work. It was just that good! :o)


I had two slices of the bruschetta left over from last night, so I decided to bring it to work and have it for lunch. The only way I had to warm it up was in the microwave, so it wasn't crispy today...oh well. I decided to put some fresh cucumbers on one slice and some cashew cheese on the other. After taking a bit of both, I decided I wanted the cashew cheese and cucumbers together on both slices. Yes, it would have been better if the bread was crispy, but what's a girl to do when an oven is not available? I also had some of my homemade chickpea salad to go along with it. Perfect lunch for today. :o)

  5. I love the wheat bran addition in the smoothie, nice touch! Glad you liked the ginger in your smoothie.

    Your bruschetta sounds great. Maybe a few olives or capers would be nice if you like salty things.
