Labor Day Weekend

I hope everyone is having a great Labor Day weekend. Friday after work, I ran to the grocery store because we were out of so many things. I was very disappointed in the produce this time. It didn't look very good and had been picked over. Of course, I was NOT thinking about it being Labor Day weekend and the fact that everyone would be cooking out this weekend. Oh well, I did find one good thing though. Kroger had Tofurky Italian Sausage. I have to admit I got a little excited when I saw it. I knew right at that moment what we were having for dinner. We had sauerkraut, tofurky (Tony had kielbasa), fresh silver queen corn, great northern beans, and corn bread. The tofurky was perfect with the sauerkraut.

Saturday morning I got up and went to the farmers market. To my surprise, it wasn't as crowded as it usually is. I mainly went for yellow squash and zucchini, but ended up getting some pears, bok choy, little red potatoes, strawberry peppers and sesame sticks that are made by the Amish.

Here are the strawberry peppers. Has anyone ever seen or used these? The Asian family that were selling them said they were very sweet. They even let me try one to see how they tasted...they were so sweet. Needless to say I had to get them. Now I just need to figure out how I am going to use them in a dish. Any suggestions?

When I got home from the farmers market, I made some steel cut oatmeal and then added some maple syrup and fresh raspberries. I totally prefer steel cut oats over the other!

Saturday night I made Alicia Silverstones Fried Udon Noodles. This dish consisted of udon noodles, cabbage, onions, garlic, sweet paprika, salt and pepper. I have been wanting to try this dish for some time, but always seemed to forget to buy the cabbage. I have never been a fan of cabbage, so I was a little nervous about actually trying it. I have to say it was a delicious dish and I will be making it again!

We have a hummingbird vine that covers our porch railing out front that the hummingbirds and butterflies love. I looked out the window Saturday morning while I was waiting for the oatmeal to finish cooking and saw this little hummingbird eating. I managed to take his picture through the window. I love hummingbirds....they are so amazing. You can't help but smile when you see them. :o)

I hope everyone has a great Sunday!
~Peace~

  2. That reminds me that I have some sausage in the fridge I need to cook up too! Hm...as for those peppers. What about a bean salad? Like black beans, those peppers, bell peppers, onions, corn, veganese, sour supreme, cumin, and other spices?

  3. Look at you eating the rainbow like a life long vegan! Dunno what to do with the peppers, guess you could eat them raw dipped in Goddess Dressing?

  4. Our grocery store was a bit picked over on Friday too. Must have been the holiday weekend.

I have not seen those peppers before. But since they are sweet use them any place you would use red bell peppers.

I love cabbage and pasta together. In fact that is what I made for lunch today. Mine was Italian rather than Asian but there was pasta and cabbage. ;-)

enjoy the rest of your weekend,

  5. Everything looks great and I love the red peppers. I would do minimal cooking with them since they're already so sweet. Diced in a salad, or for a quick stirfry.

  6. Everything looks so good! I have never seen those peepers before though so you've made me awfully curious about them! Don't forget to tell us how you use them. :)

  7. Oh, I'm glad your farmers market had good stuff after your grocery store didn't.

I'm making some recipes from the Kind Diet too, and I've loved them all. That's becoming one of my favorite cookbooks. I might have to try the fried udon soon.

I'll be looking forward to seeing how the peppers come out! I love trying new produce but I always have to search for a recipe/use for it.

  8. I don't think I've ever seen those peppers, either. Peppers scare me, and I wish they didn't so I can use them more. I'm scared to try them if I don't know how spicy they are. Regular oatmeal almost tastes weird to me as opposed to the chewier taste of steel cut oats now.
