I made a simple recipe, so Tony would eat it. While the udon noodles were cooking, I sauteed 2 cloves of garlic (minced) with half of a chopped onion and bell pepper in a little sesame seed oil. I then added 1/3 cup of vegetable broth and 2 tablespoons of lite soy sauce to the onion/pepper mixture. After I had mixed that up, I added 2 cups of chopped mushrooms and half a cup of sliced carrots. I let that simmer for about 10 minutes with the lid on...stirring every little bit. I then added the udon noodles, that had been rinsed in cold water, to the mixture . I put the lid on and let the noodles soak up the flavor for about 5 or 10 minutes.
While the noodles married with the veggie mixture, I warmed up some seitan strips in a separate skillet to add into my Lo Mein. I knew Tony wouldn't eat the seitan, so I kept it separate. He cooked himself some meat to go with his Lo Mein. But....this is a HUGE BUT here...Tony tried the seitan....YES, he sure did. YAY! He was tripping out on how much it looked like meat, so he reached over and got a bite. What did he say? He said "not bad". Look out folks...he's getting brave! :o)
I love these seitan strips. I must buy more when I go to Whole Foods again!

I love lo mein, and your noodle bowl looks very inviting. I've never tried that brand of seitan — we usually make our own — but it would be really handy to have some available for short notice. I'll look for it next time I'm in Whole Foods.

Lo mein is so good and how terrific that Tony tried some of the seitan! We can't find a lot of stuff where we live, either, so we end up going to Milwaukee every weekend.

ReplyDeleteYummy! I love lo mein! What does your hubby think about you going vegan? My hubby and kids still eat meat when they are at other peoples' houses but eat vegan at home since that is what I cook :-) My husband grew up in a meat-loving family and has always LOVED meat. I never thought he would be eating a 97% or so vegan diet...and enjoying it!! You never know... :-)

ReplyDeleteOhh, that looks so good. Will have to keep an eye out for the seitan strips when I hit Whole Foods next, haven't tried them yet. It is amazing when others try something vegan they realize it really isn't horrible. So glad Tony like the seitan!
