Happy Monday! I hope you all had a great weekend! A couple of weeks ago Tony went to Sam's to pick up a few things that we were out of. While he was there they were giving away a free Sam's Club cookbook. All he had to do was give them his email address. That cookbook was the first thing he showed me when I got home that day. He was so proud of it, and I found out why. It has some great recipes in it. We made this Cran-Peach Crostata last night for dessert and it was delicious. The recipe was actually called Peach Raisin Crostata, but we wanted to use cranberries instead of raisins. This was so good that we ate half of it last night. Most of you may have made something similar to this before but this was a first for us and definitely not a last. I have to share the recipe for this, so here it is.....
1 cup dried cranberries
1/2 cup sugar
2 tablespoons flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
4 cups fresh peaches or 1 16oz bag frozen peach slices
1 tablespoonon lemon juice
9-inch unbaked pie dough or shell
Preheat oven to 425. Combine cranberries, sugar, flour, cinnamon, and salt. Then, mix in the peaches and lemon juice.
Lay pie dough out onto a greased non stick cookie sheet. Mound fruit in the center of the dough leaving a 1-2 inch border. Fold dough around the fruit mixture, gently pleating and pressing dough against mixture.
Bake 10 minutes at 425. Reduce temperature to 350 and bake 20-25 minutes, or just until crust is golden brown. Leave to cool on the pan for 10 minutes. Remove and sprinkle with powder sugar if you desire.
There is one change that I will make to this recipe when we make it again. I will only use 1/2 cup of cranberries instead of 1 cup. That was just to many cranberries for us. Oh....Tony's the one who folded the dough around the fruit. Didn't he do a great job! :o)
