Hey everyone! I didn't get the chance to blog yesterday, so I'm posting Monday's supper today. Have you ever made Ratatouille? Well, my first try with it was Monday night, and I thought it turned out pretty tasty. I know there's tons of recipes out there for Ratatouille, and they all seem similar in ways. Here's how I ended up making mine.
Ingredients:
1/2 cup water
1 onion, chopped
1 med size eggplant, diced
1 bell pepper, seeded and diced
1 15 ounce can diced tomatoes
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
2 small zucchini, sliced
Peel and dice eggplant. Salt eggplant well and put into a colander to drain for 30 minutes. Rinse the salt of the eggplant and set aside for a bit.
Heat water in a large pot and add onions, bell pepper, and garlic. Cover and cook over medium heat until onions and peppers are soft. About 5 minutes.
Stir in eggplant, tomatoes, basil, oregano, thyme, salt, and pepper. Cover and simmer, stirring often, until eggplant is tender. About 15 minutes.
Stir in zucchini. Cover and cook until tender. About 5 minutes.
As you see I had more black eyed peas, and some quinoa to go along with my Ratatouille. :o)
Moving onto breakfast. For the last two mornings I've been out of bananas, which I can NOT believe. So, Tuesday morning I had wheat toast with almond butter and plum jelly. This was actually good for a change.
This morning I had some overnight oats with almond butter and Chocolate Amazing Grass. I'm also out of milk, so I had to use water. Well, I got to work this morning and was about to starve, so I tied into my breakfast, but bleh....It was NOT good, at least not to me. So I had to opt for a not so healthy breakfast. I walked down to the cafeteria and got some good ole seasoned taters. They also had some apples, so I bought one. I thought it would be good to offset the bad with some healthy. I hate to say it, but this wasn't even good. I ended up eating half of the potatoes and didn't even eat the apple. I miss my smoothies!!! With that being said there will be a pit stop on my way home to grab nanners and milk! :o) Is it strange to be so hooked on smoothies? Is there anything that you just have to have daily?
Do you ever take something to work for your lunch and as lunch time gets closer you decide that you really don't want what you brought? It's just not sounding good? That was me today. I cooked a couple of Boca burgers last night, so I would have them for lunch over the next couple of days. A Boca burger was supposed to have been my lunch today, but for some reason I was craving hummus. When lunch time rolled around, I ran up the road to Kroger and bought some Roasted Red Pepper Hummus, a Roma tomato, some alfalfa sprouts, and some pita chips. Yep...pictured below is what I ended up with for lunch, plus the pita chips that didn't make it into the picture. I had brought the greens to put on my burger, so it was a perfect fit for the sandwich. The hummus veggie sammy was much better.....It did hit the spot!

ReplyDeleteI've had that happen with my lunch before, but the problem here is that there aren't many places I can go for a good lunch. I wish we had more choices!
I love ratatouille! It's so easy and tasty. I'm out of spinach and bananas too! It really throws the routine off. I hear you on the lunch thing, too, but I hate to spend money if I have food with me, so I usually just eat it anyway.

Ohh no I would have went for the Boca burger...We don't have them in England but I had one on holiday once and they are the BEST veggie burgers ever, don't you go takin' them for granted now! :-)

Maud, I normally eat what I have also, but this day I just couldn't for some reason. Yeah, being out of something that you usually have all the time really does throw the routine off.

A Diary of an Animal Lover, Don't worry...my Boca burger didn't go to waste. :o) I ate it the next day for lunch. :o) I can't believe you don't have them in England...that stinks. I bet you have good things that we don't have though.
I hear you on the lunch situation. Usually I'll just eat what I brought, anyway, but I've been known to get some potato chips from the vending machine if I'm really wanting something extra. Just taking the time to make lunch makes me feel like I should eat it. But man - your Kroger purchase really looks good.
