Butternut Squash Soup

Happy Friday!   I'm off work today, so I'm doing the happy dance.  :o)   It's my last 3 day weekend of the year with the exception of the Holidays....boo.  I could easily get used to working a 4 day week!  Last night Maggie and I had the house to ourselves which felt strange!  Tony went to Rum Boogie that's located on Beale Street in Memphis.  Some friends of his were playing in a Blues competition there last night night, so he went along to give them some support, and they won!   I probably would have starved if I had of been there, because I don't think it was a veg friendly place...ha   I'm glad he went though because it has given him a the incentive to buckle down and start playing his guitar more.....yay. 

Anyway...on to the Butternut Squash soup!   I went by a recipe that I found here at Chow Vegan.  I looked at a few different recipes on the internet, and this one sounded like the one that I would like the best.  Now, I have to tell you something and don't laugh.  This was my first time to make and to try butternut squash soup...yes I know, I have lived under a rock most of my life....ha   I can't believe that it took me this long to even try it.  I guess because it always reminded me of baby food.  I never though that something pureed like that could be so good.  Oh, was I ever wrong.  This is the best stuff!  The only bad part about it is peeling and cutting that darn little squash.  I did have to make a few changes to the soup, because I didn't have or want a couple of things in it.   I used 1 cup of vegetable broth and 1 cup of water in place of her two cups of water and vegetable bouillon cube.  I also used garam masala in the place of the cayenne pepper.  Oh, and I also put a dash of cinnamon in it.  I also didn't top mine off with the green onions.  I did however top it off with the tofu croutons, which was great!  This recipe is definitely a keeper! 


Maggie didn't like the idea that her daddy was gone last night.  She usually sits between us on the couch every night and she doesn't like it when her routine gets messed up.  She kept giving me this look last night as if she was asking,  "Is he here yet"...lol   People can't tell me that animals don't have souls and that they don't have feelings, because they do!  Don't you think?


Since I'm off work today, I'm gong to be heading to Whole Foods in Memphis....YAY!   I hope I don't forget anything this time.  :o)   I hope everyone has a great Friday and weekend!

  1. I hate peeling those suckers, too. I always almost lose a finger :(. Having said that, your soup looks great!

  2. Yep, Rum Boogie is definitely not so vegan-friendly. You could have had fries and a salad...but that's about it.

    Have fun at Whole Foods! I wish I had today off to go shopping. :-)

  3. Confession time. Not only have I never made butternut squash soup, I just bought my first ever butternut squash. I'm not going to tell you how old I am , but I am well into my senior years. I think I now have some courage from you to try it out.

    I've never had butternut squash soup, either, but I do have a butternut squash...... now I know what I might do with it! I bet I'd love the soup.

    I couldn't agree with you more about animals. If anything, they feel things more than us because they're so pure. <3

  5. Oh yeah, I'm all for the 4-day work week!

    The soup looks luscious! It changes the flavor slightly, but if you have time, you can cut the squash in half and roast it in the oven. When it comes out, it's easy to peel (after it cools a little) and toss into a soup.

    Animals definitely have feelings, thoughts, and souls! It's just old-fashioned human prejudice that propagated any idea otherwise.

  6. Your soup looks SO good!!! It is always great to try new things. My fav butternut squash dish was something I got from the prepared section of Whole Foods. It was brown rice with roasted butternut squash, roasted mushrooms and caramelized onions. It is SO good! I have to look out for it again, tis the season!

    I absolutely agree animals have souls. She is so sweet, you have to love that face! She brightens up any day I'm sure.

  7. I'm glad you finally got to make butternut squash soup — one of my favorites. Peeling is a drag and one way you can avoid it is to halve and bake the squash, then just scoop out the flesh and puree it. Butternut squash skin is actually edible, if you want to give it a try.

  11. Awww poor Maggie missing her daddy!! Absolutely, couldn't agree more. My eldest pooch, Lord Wallace is usually so independent and not needy at all, and I was away this weekend and my boyfriend said he just wouldn't leave his side and he could tell he was missing me, and I believe him of course, haha!

  12. I don't know about souls, but they definitely have thoughts and feelings. They can obviously be sad and learn, and it's just so weird that people don't get that. I love to see how one of my dogs reacts when she knows the other one somehow didn't make it inside the door and it sitting outside waiting for us to open it - or if one gets shut accidentally inside the bathroom or something. It's so sweet.

    I like artichokes on pizza and in pasta. And on sandwiches. And pretty much on everything. If you don't like the ones you got (but I do), try marinated ones.
