Overnight Oats

Okay, here is an interesting take on oatmeal. I have become intrigued with http://www.ohsheglows.com/. I am always in amazement at what Angela comes up with. I have noticed her making and eating a lot of vegan overnight oats. I found my self interested in them, but then I looked closely at the recipe and thought “I can not imagine having cold oatmeal’. That is exactly what vegan overnight oats are. They are cold, uncooked oats. I decided to give it a try. I am learning to not “say no” to anything until I have tried it. So, last night was the big night. I didn’t go exactly by her recipe, because I didn’t have a couple of the items that her recipe called for. I’m going to post the recipe that I used, but I strongly suggest that you check out her website. It is full of great recipes and is loaded with tons of great information. She has several awesome sounding variations of her overnight oats that I will be trying in the future. Here’s what I did.

1/3 cup regular oats
¾ cup soy milk
½ chopped banana
¼ tsp cinnamon

The night before, mix all these ingredients up in a bowl and put in the refrigerator. The next morning take the bowl out and add the following.

1 heaping tablespoon of almond butter (or any nut butter)
Pure maple syrup to taste


I didn’t measure the maple syrup. So, just add the amount that you think will make it sweet enough for you. Mix the nut butter and maple syrup and the oat mixture together and eat up.

If you like oatmeal, I strongly suggest you try this out. Check the different variations that Angela has on her vegan overnight oats. With this recipe that I made, she actually used Almond milk and added chia seeds and vanilla extract. I can’t wait to try it with those ingredients.

  2. I haven't tried overnight oats yet, either, but I was also slow to get on the green smoothie bandwagon (and I'm loving it!) so now seems like the perfect time.
