Zucchini Bread

This has to be the absolute best zucchini bread that I have ever eaten. I can't say it's the best I've ever made though, because this is actually the first time I've tried making it. The thought of making bread out of zucchini always sounded odd to me. I got over that feeling after I tried it though. I am really over it now after making this recipe! Even if you aren't vegan, you will love this bread! Very Yummy!!!


1/2 cup unsweetened applesauce
1/2 cup organic sugar
1/2 cup packed brown sugar
1/3 cup safflower oil
1 tsp vanilla extract
1 1/4 cups shredded zucchini
3/4 cup all purpose flour
3/4 cup whole wheat flour
1 1/2 tbs ground flax seed
1/2 tsp salt
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp baking powder
1/4 cup chopped walnuts or pecans (optional)

Preheat oven to 325. Spray 9x5 loaf pan with canola spray. Combine applesauce, sugars, oil and vanilla. Mix until smooth, then add zucchini. Combine dry ingredients together and add them to the wet mixture. Mix in nuts. Bake 55-60 minutes until toothpick inserted in center comes out clean. Allow the bread to cool in the pan for about 10-15 minutes before removing. Once removed allow it to cool completely on a wire rack. Slice and enjoy. :o)

    This looks yummy. I've never even had zucchini bread, let alone try it so I'll have to bookmark this recipe!

  2. I've only made zucchini bread twice, both from the recipe in Vegan Brunch. I agree, hearing of it without trying it is so weird!
