Strawberry Salad Dressing

It’s Wednesday….YAY. The work week is downhill from here! For some reason I am already ready for the weekend to get here.


Last night I fixed a salad. Tony and I both wanted something fairly light, so a salad was the winner. I used Romaine lettuce and added carrots, broccoli, sunflower seeds, almonds, oven roasted roma tomatoes, strawberries and some dried french onions. I also had a side of some homemade dill pickles. These were a little on the tart side for me. I think I will have to tweak the recipe. For my salad dressing I tried my hand at making my own this time.

I used some fresh strawberries, fresh sweet basil, orange juice and agave nectar. I put all these in a blender and kept adding the orange juice and agave a little at a time until I got it to the consistency and sweetness that I wanted. It turned out good, especially for my first try. I was thinking about the dressing this morning and thought about adding some balsamic vinegar to it the next time. It had a real fresh taste to it. I’ve always used dried basil when cooking, but WOW at the difference in the taste when you use fresh.

I also want to thank everyone for their feedback on my smoothie with kale. I was going to try it this morning with some different fruit, but I chickened out. Instead I used spinach for my greens, a frozen fruit blend of peaches, pineapples, strawberries, and mangos, 1 very ripe banana, 2 tbs of hemp seeds, 1 tbs of chia seeds and rice milk. I have to say, the smoothie was MUCH better! :o) I was in a hurry this morning, so I just used my cell phone to take the picture.

  1. For some reason the picture of the salad dressing won't post right. :-( Am I the only one that has problems with getting pictures to post correctly?

  2. Your photo looks fine to me! Must have gotten straightened out in the meantime.

    Making homemade salad dressings is something I'm trying to do more of. Yours sounds great - what a neat idea to put strawberries on the salad and in the dressing! I like balsamic vinegar with strawberries; sometimes I slice the berries and put some balsamic vinegar on them. I think that would be a great addition to your dressing.

  3. That salad sounds great; I love the addition of oven roasted tomatoes...and strawberries are awesome in salads. Your dressing sounds fab too; I bet all the fruit flavors and the fresh basil were a delicious compliment to it all...thanks for recipe!

  4. I used to turn away from mixing fruits and veggies, but I've gotten better about getting used to it in the past year or two. It's all in my head because it always tastes delicious.
