Back to the Grind - Day 2

Happy Tuesday... :o) I'm still trying to get back in the swing of things after being on vacation for a week. Hopefully after today, I will be back on track.

Sunday night for dinner I made some fried tofu. I had put half of a block of tofu in the freezer before we left for vacation and I really wasn't in the mood to do much cooking Sunday night, so I just came up with something simple. Of course we didn't have much to choose from since the pantry was pretty much bare. You know how it is when you get back from vacation. You have nothing in the house to eat! I marinated the tofu in a little soy sauce and ginger. Before frying it, I sprinkled the tofu with a little corn starch to make it crispy on the outside. I had pinto beans and olive oil/garlic pasta for the side items. It wasn't my favorite fried tofu dish, but it was still good! I know...it's doesn't look very appetizing, actually it looks a little like fried livers to me.


Last night for dinner we were in the mood for a good ole homemade salad. I'm still trying to learn to eat and like raw veggies. I've never liked raw veggies, such as cucumbers, tomatoes, peppers, or onions. I mean never! While on vacation we stopped at Panera Bread where I had to get raw veggies, so I got the Mediterranean Veggie sandwich, which consisted of Zesty Peppadew piquant peppers, cucumbers, lettuce, tomatoes, onions and cilantro along with JalapeƱo hummus on Tomato Basil bread. We also stopped at a subway (raw veggies again) where I got a veggie sub. Yes, I admit, it was good. But it still weirds me out to know that I am now eating raw veggies that I used to really not like at all. I mean I wouldn't have eaten them if you had payed me. Anyway, I added some cucumbers and tomatoes to our salad last night. It was honestly the best salad I think I have ever made. I'm slowly but surely adding those raw veggies! Now to tackle the raw peppers!



For breakfast I got to use my new Eco 2 Go cup that I got while on vacation. I just love this cup. Now, maybe I won't be spilling my smoothies and coffee drinks on me anymore.


Yep, I had my mocha coffee drink this morning. However, I used soy milk this time, so I could get a little more protein.

For lunch, I had a Morning Star Veggie burger on pita bread. I added some veganaise, spinach, cucumbers and some thinly sliced Roma tomatoes to my sandwich. I am trying really hard here to fall in love with the raw veggies! I admit, the sandwich was delish! I think it's the best homemade sandwich I've made yet.


Here's to raw veggies....

  1. It takes a while to 'catch on' to all the vegan stuff out there. Soon you'll find there are more vegan things to eat than non-vegan.

  2. That's a good looking salad. You'll find stuff you do and don't like. I don't like raw cucumbers in salads. Good to see you're experimenting, and I hope you're having fun with it!

  3. I know what you mean about eating stuff you never liked before. Not only am I eating all kinds of fruits and veggies, dried beans, tofu, etc. than I ever ate before I went veggie, I look forward to trying more new things every day! So, you'll never know where you'll be in a year, Michelle. Perhaps, we'll see an incredible raw veggie salad post on your blog!

  5. What Morningstar Burger did you have that was vegan? All the ones I have looked at have egg or milk or cheese in them. I have found 2 Boca Burgers that are vegan but no MSF. Also, what kind of tortillas do you use? I have not found any vegan tortillas either. They all have mono and or diglycerides in them which can mean animal fat.
