We weren't really sure what we were going to do with all of them, but we knew we had to do something with them soon or they would ruin, and we did NOT want that to happen! We have been patiently awaiting those little Romas to arrive! So, we decided to peel and stew the tomatoes to make some spaghetti sauce. It was around 9:30 when the sauce was ready. I normally go to bed between 10:00 and 10:30, so I knew it wouldn't be cooled off enough by that time to put in the frig. Lucky for me, my husband stays up much later than me, so he put the sauce away. Actually he is the main one who made the sauce, adding all the spices and such to it. So, unfortunately I don't have a recipe. I never even saw him measure anything.
I bet you know what we had for dinner last night. Yep, Spaghetti. :o) I sauteed some onions and mushrooms to add to the spaghetti sauce last night as we were heating it up. I know Tony put some garlic, oregano, basil, salt and pepper in the sauce to season it, but that's all I know. This was our first batch of sauce to make from our own tomatoes. It turned out great. It always feels great to get to cook with your own home grown veggies!
For breakfast this morning I made a different smoothie. I had a peach banana smoothie. I couldn't believe how good it was. It tasted just like the homemade peach ice cream that my dad used to make. It was delish. To make the smoothie I added some frozen peaches, a frozen banana, a large handful of spinach, 2 tablespoons of hemp seeds, a tad bit of agave nectar and some soy milk to the blender. It was delicious!
Here's my awesome lunch that I had today...ha. I went simple today, and had a PB&J with some falafel chips. I know that doesn't look like many chips in the picture, but that's because I ate half of them before lunch. Those chips are addicting!!! Oh, don't you just love my Christmas plate. :o) My mom had a ton of paper and styrofoam plates that she was going to throw away when she moved, so I got them to use at work. They sure have come in handy!
Hehe, when I first read your title, for a split-second I thought "What?! Spaghetti and peach, together, in a SMOOTHIE?!" :P Your homemade sauce sounds AWESOME, I love homemade marinara. And falafel chips? Maybe you mentioned them elsewhere, but I missed that - what are those?!

Amber, that is to funny. I had never heard of falafel chips until last week. We went to visit my sister-n-law up in NJ, and she had bought some for us to snack on. Needless to say, we had to bring a couple of bags back home. I've never seen them around here. They are so good!
ReplyDeleteThe spaghetti looks fantastic. We usually put some Boca Crumbles in our spaghetti sauce. I'm sure Tony will give you a portion to try adding some TVP or Boca Crumbles to.

Awesome tomato harvest! Yum, that sauce looks great! Don't laugh, but the tomatoes are only starting to think about getting ripe in my garden...I will probably be able to harvest 1 ripe one in 2 or 3 more days. :)
