Her recipe called for the addition of raisins or cranberries, which was optional. I chose to put dried cranberries in mine. I wasn't too sure how pumpkin and cranberries would be together, but it was a perfect combination.
Since the weather has been a little warmer the last few days, I decided to make a peach smoothie for breakfast this morning. I used a cup of frozen peaches, 1/2 of a frozen banana, 1/4 teaspoon of cinnamon, a handful of fresh spinach and almond milk to blend everything together.
I overslept a little this morning, so I didn't have time to fix my lunch. Since I didn't take my lunch to work, I chose to go for Chinese takeout. :o) I got my usual which was the mixed vegetables with tofu. And of course it was as delish as always. :o)
That is the poofiest looking loaf of pumpkin bread EVER! Love it! :P
