Mexican Lunch

I hope everyone is having a great Tuesday. This post is going to be short and sweet as it has been a very busy day, and I am still hard at it.:o) Last night for supper we had tacos. I made my "meat" out of TVP (textured vegetable protein). I put some taco seasoning in it before it had soaked up all the water. It was okay...not my favorite though. Anyway, of course I had leftovers, so I made a wrap for lunch today. I used some Mexican rice as the first layer, then the taco seasoned TVP as the second....simple enough. I have to admit that lunch was more tasty than supper last night for some reason. I had also made some fresh guacamole last night. I can't believe that I used to not like this stuff. I think it taste better every time I make it. Here's my recipe from last night.

1 avocado
1 Roma tomato, diced
1/4 teaspoon garlic powder
1/2 of lime juiced
salt and pepper to taste.

Peel and mash the avocado and mix in the tomato, garlic powder, salt, pepper and lime juice. So simple yet so good!



The chips you see with my wrap are some Harvest Multi-Grain tortilla chips by World Table that are awesome. I actually found them at Wal-Mart....yay!

That's all for tonight. I am trying my hand at canning my first batch of green tomato salsa. More on that in a few days.

  1. I'm such a fan of TVP, even if it IS overprocessed soy. So especially tasty in Mexican preparations!

  2. That guac recipe does sound good! Keeping it basic is the way to go with quac in my humble opinion.

  4. I sometimes use TVP in chili or burgers, but I don't know about eating it on its own or with just taco seasoning... give it another try. Still looks like a great lunch! The guac looks good, I love making it fresh and just tossing in whatever sounds good.

  5. I feel like most people either love guacamole or hate it. I think it's great that you make sure you pack a good lunch everyday. When I'm going to be out, I'm always in a hurry, and I think it will be okay without bringing something. Then I'm starving.
