Pasta for One

The holiday weekend is coming to an end and the work week is right around the corner. I hope your weekend was as enjoyable as mine.

The other night for dinner, I wanted one thing and Tony wanted another. So, while he cooked his supper, I cooked mine. :o) I was just in the mood for some kind of pasta and he wasn't. Pasta is another one of those dishes that I could eat all the time. I put a cup of whole wheat shell pasta on to cook while I got the remainder of the ingredients ready. I sauteed 3 cloves of garlic (minced) in two tablespoons of olive oil for a couple of minutes. I then added 3 Roma's (seeded and chopped) and sauteed that for another couple of minutes. Next, I added a large hand full of organic spinach and a little more olive oil. I let that cook for a couple of minutes, then drained the pasta, once it had finished cooking, and added it to the spinach and tomatoes. I added a little salt and pepper and let it cook on low heat for a few minutes, just long enough to marry the ingredients together. That was my easy, but delicious pasta dinner for one....at least I thought delish. Tony kept eyeballing it, and telling me that it sure did look good. I think he was a little jealous...ha

  3. I'm sure he was jealous of that pasta! Everything you put in and all the garlic, yum; I was hungry just reading the description before I even saw the pic! I'm with you, I could easily eat pasta most any day without ever tiring of it!

  4. This looks like a great dish. I'm hungry for pasta, too. I've never used shells outside of mac and cheese, but I love how they are cupping the tomatoey goodness!

    You know I am holding out for Tony to be more open to your good vegan eats. It sounds like you are unintentionally working him over with these delicious meals.
