Isa's Chickpea Cutlets.....YUM

Happy hump day....only 3 days until Christmas....yay! I hope you have all of your shopping finished. :o)

This will probably be the shortest post I've ever made, because this is a super crazy day. I just had to share with you that I finally made Isa's Chickpea Cutlets out of Veganomicon last night. Again I wonder....what took me so long to make them. I've really been enjoying this cookbook lately! I also noticed that the recipe is online at food.com and can be found here.

I have to say...these were awesome! To go along with the cutlets, I had fresh Silver Queen corn, and a baked sweet potato with cinnamon sprinkled on it....YUM!

  7. I love those cutlets! I usually double the batch & eat the leftovers for lunches throughout the week. They're great warmed up in the toaster! :)
