Thai Cafe / Maggie's Christmas Treats

I hope you had a great Christmas...we sure did! I hope you got everything that you wished for! I am very excited, because I got 4 new cookbooks....woohoo! I can't wait to start trying out the recipes. We did a Christmas exchange at work and I received Vegan Planet by Robin Robertson. Tony's mom gave me How It All Vegan, Cup Cakes Take Over The World, and Viva Vegan. I've looked through them and I have to say, I am the most excited about How It All Vegan by Sarah Kramer and Tanya Barnard. It is loaded with all kinds of simple recipes and tons of great information. Perfect for me, since I'm still learning. Don't get me wrong...I love them all, but this one is perfect for me right now. :o)

Maggie wanted to share what she got for Christmas. She got a new bed and apparently loves it. It is an eco bed made from recycled water bottles....pretty cool huh. At first she just sniffed the bed and walked away. I was a little disappointed, but then I realized that she smelled her homemade treats that Santa left her. After she got a treat, she crawled into her new bed and sat in it....that made her momma happy. :o)


Below are the Christmas treats that I made for Maggie. I also made some for for our doggie family members. From what I've heard...all the doggies loved them. Here's the recipe I used to make them. I will be making these quite often.

Peanut butter and Pumpkin Dog Treats
2 1/2 cups whole wheat flour
2 eggs or (2tbs flax seeds & 6 tbs water mixed together)
1 cup canned pumpkin
2 tablespoons peanut butter
1/2 teaspoon salt
1/2 teaspoon cinnamon

Preheat over to 350 degrees
Mix the flour eggs (or flax eggs), pumpkin, peanut butter, salt and cinnamon in a bowl. If the dough seems to dry and isn't workable, you can add a little water. the dough should be dry and stiff though. Roll dough out to 1/4 - 1/2 inch thick and use cookie cutters to cut out shapes.
Bake in preheated oven for 30 to 40 minutes.

I cooked half of mine for only 30 minutes, so they would be softer for Maggie to eat. The treats that I gave away, I cooked for 40 minutes. These are Maggie approved, and that says alot, because she is a very picky eater. :o)


One night over the holiday weekend, we went to eat at the Thai Cafe. This was the 2nd time that I have been there, and I love it. They have the best and biggest veggie "egg" rolls I have ever seen. After I had eaten half of it, Tony reminded me that I didn't take a picture of it. It was very hard for me to stop eating long enough to take the picture. :o) Look at all that goodness!

I ordered the Buddha's Delight. The bowl was filled with all kinds of veggies and tofu. It also came with a bowl of steamed rice to put the veggies over. I barely made a dent in all this food, so I had plenty to take home for leftovers. No leftover egg roll though....
Look at all the veggies.... Have you ever eaten veggies, but you didn't know exactly what you were eating? Well, that was me eating this. I only knew what half the veggies were in this bowl of goodness. Sometimes when I thought about and wondered what all I was eating, I got a little weirded out. I'm strange like that.....I like to know what I am eating.


Now the count down begins for New Years.....

  1. First: dog biscuits!!!! Wow, they look really good! Is it normal where you are to bake for your dog? Certainly not here.

    In Italy we have pasta for dogs, yes, specifically made for dog, and you cook it like you cook your normal pasta... but in a separate saucepan. My husband could not believe that Italians made pasta even for their dogs...

    Second: I always take photos in restaurants, my family feels quite embarrassed about it...

    and third, in regard to rocket, maybe you have it there but use the Italian name rucola, or dialect, arugola... :-)

  2. Maggie looks so adorable sitting on her new bed! And it's made out of recycled water bottles? That's too cool. The doggie treats look great too!

    How exciting with all your new cookbooks. I can't wait to see some of the dishes you make with them. And that Thai food looks super...especially the veggie roll.YUM.

    I hope your pups use their beds longer than my cats used their beds. I think the novelty wore off after about a day. *shakes head*

  5. I love Maggie's new bed! It looks so comfy. Thai food is some of my favorite, especially anything with peanut sauce. Yum!

  8. Your dog sounds pretty pleased with her Christmas haul :) I gave my kitty a few treats today too and am constantly thinking of getting her a real bed but I wonder if she would use it. Cats are very particular, or at least she is!
    Haha, yeah I like to know exactly what it is I'm eating too..I guess as long as you know it's vegan it's alright though. I do know Asian food uses water chestnuts a lot, so maybe that was in there? Cabbage too..anyway I hope it was tasty!

    Out of all your new cookbooks, I have Vegan Cupcakes Take Over The World. I absolutely love it! My kids really like it b/c at birthday time, if they want cupcakes, they get to flip through the book, and I'll make whatever they pick out. Enjoy!

  11. That's really nice that your mother-in-law was supportive by giving you vegan cookbooks! We got our dogs two new beds for Christmas - one for the living room, and one for their crate. They chewed the one in their crate to bits the first night. $15 down the drain. :0
