I remembered that I still had brussel sprouts in the refrigerator that I had bought a few days ago and soon realized that they were about to ruin. I thought for a moment and then decided that I would saute some brussels and sliced onion together. I sauteed them in a little olive oil and added a splash of balsamic vinegar as they were cooking. I also added some salt, pepper and a little garlic powder. I squeezed some lemon juice on top after I put them on my plate.
Yes, I chopped my brussels up. :o)
I put some vegan butter, herbamare and nutritional yeast on my baked potato. I finally remembered to put nutritional yeast on my potato....YAY. I always forget about it, until I am just about finished eating it....then it's just too late. The baked potato rocked....so did the brusssel sprouts and onions! A simple but tasty meal!

I've never heard of nutritional yeast on a baked potato before. I usually go the S&P and Sour Supreme and Bac'Uns route.

That baked potato does look the business! Potatoes are so satisfying that way. I love brussel's sprouts too.
