Hello.... Are you ever just "not" in the mood to eat? I suppose you could say that's the way I was Tuesday night, so I didn't eat much. I had a butternut squash in the refrigerator that needed to be used, so I decided to cook that. All I had to go with it was some fresh corn out of the freezer. :o) Not a very fulfilling meal is it?
The butternut squash was a simple recipe, but very good. All you need to do is peel and cut the butternut squash into chunks. Heat 2 tablespoons of vegan butter in a nonstick skillet and then add the squash. Let the squash cook over medium heat for about 15 minutes, then add 1/2 cup of vegetable broth, 1/4 cup water and 1 tablespoon of brown sugar. Cook for another 10 - 15 minutes. It hit the spot, but seemed like it was missing a little something. I think a little cinnamon and ginger would have made this even better.
Last night we went to church. I wasn't in the mood to rush home, do a quick cook, and then run back out the door. So, I talked my husband into going to Panera Bread....YUM! I got the Mediterranean Veggie sandwich, which was doubly delicious! I've been craving a raw veggie sandwich the last couple of days. I guess you could say that I didn't get my fix of veggies last night, because I ended up getting a veggie sub at Subway for lunch today. I'm not usually a big fan of Subway, but it was delicious today.
