Butternut Squash

Hello.... Are you ever just "not" in the mood to eat? I suppose you could say that's the way I was Tuesday night, so I didn't eat much. I had a butternut squash in the refrigerator that needed to be used, so I decided to cook that. All I had to go with it was some fresh corn out of the freezer. :o) Not a very fulfilling meal is it?
The butternut squash was a simple recipe, but very good. All you need to do is peel and cut the butternut squash into chunks. Heat 2 tablespoons of vegan butter in a nonstick skillet and then add the squash. Let the squash cook over medium heat for about 15 minutes, then add 1/2 cup of vegetable broth, 1/4 cup water and 1 tablespoon of brown sugar. Cook for another 10 - 15 minutes. It hit the spot, but seemed like it was missing a little something. I think a little cinnamon and ginger would have made this even better.

Last night we went to church. I wasn't in the mood to rush home, do a quick cook, and then run back out the door. So, I talked my husband into going to Panera Bread....YUM! I got the Mediterranean Veggie sandwich, which was doubly delicious! I've been craving a raw veggie sandwich the last couple of days. I guess you could say that I didn't get my fix of veggies last night, because I ended up getting a veggie sub at Subway for lunch today. I'm not usually a big fan of Subway, but it was delicious today.



  1. i never think to do squash on the stove, it sounds a LOT quicker than the way i do it in the oven. i love how the people at subway *sprinkle* veggies onto a sandwich!NOT!

  2. That's a great recipe for squash that sounds so good! How do you peel the squash? That's one thing that I can never quite figure out how to do very well...

    I've never been to Panera bread but would like to sometime if I get a chance. I keep hearing about how good it is.

  5. That squash looks pretty tasty! How hard is it to peel, though? I usually roast it, so the skin is edible or could come right off because I'm scared enough of cutting into the damn thing!

  6. I used a vegetable/potato peeler on the squash and it worked great.

    FF, I know what you mean about being scared cutting these bad boys up. I think my husband was afraid for me as I was cutting this one up. He asked if I wanted him to take over, but of course I had to say "no, I got this"...ha I'm always praying I don't cut a finger off!

  8. I like getting some fresh sandwiches from time to time. I know what you mean about Subway, it's good, but it isn't. Usually that's my roadtrip food.

    The squash and corn sound great - a simple supper is the best sometimes.

  9. I'm very often not in the mood to eat. But I have this OCD thing of feeling like I must eat. (I think it transferred over from feeling that way when I have been pregnant.) Then I eat something dumb, and I'm mad at myself for wasting calories on something I didn't even enjoy.

    I have really learned to love butternut squash this year.
