Waffles...Take 1....YUM

I hope everyone is having a great weekend. This morning was a waffle morning! :o) I haven't looked up the recipes that everyone recommended yet, but I will very soon, and I will be trying them out. This morning I made some simple waffles that were fantastic! The first time I made waffles with the plain recipe, Tony suggested putting pecans in them. He was such a sweet husband Friday (I'll tell ya about that in a sec) that I decided to make these just for him this morning. Here's the recipe.

1 cup plain unbleached flour
2 tsp baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup soy milk
1/2 cup applesauce
1/4 cup chopped pecans

Mix the dry ingredients together in one bowl and the wet ingredients together in a separate bowl. Mix the wet ingredients into the dry. Mix well and then add in the pecans. Pour the batter into the hot waffle iron and top with your favorite topping. I topped mine with fresh cooked apples this morning.

For my apple topping, I peeled and diced 2 Red Delicious apples and one Granny Smith (I like them mixed). I put them in a sauce pan with a little water and then added some light brown sugar, cinnamon, nutmeg, and ginger powder. I cooked them until they were tender and most of the water had evaporated. This was the perfect addition to the pecan waffles this morning. Of course, the addition of a nice cup of coffee made them even better. Tony topped his with blueberry syrup. He seemed to really enjoy them.


I mentioned that my husband was a sweetie Friday. Well, I had a big surprise waiting on me when I got home. Tony had put our Bowflex together while I was at work....WOOHOO!! He happened to have some free time and thought he would surprise me....isn't that sweet of him... :o) Now there are no excuses for not exercising. Today marks the beginning of me getting back into shape. Got to stick to my new year goals!

  6. applesauce was used instead of oil or butter right? i love that! i bet those were so good:)

    and you made your own apple topping! good for you, what a fun morning.

    that is very sweet(surprising you with the put together bowflex), i really enjoyed reading about that.
