Enchilada Casserole

Happy Friday! Do you like Mexican food? If so, then you will love this! I actually made this last weekend, but other foods and recipes seemed to push their way in front of this yummy enchilada casserole. I actually found this recipe a couple of months ago, and have been dying to try it. I finally got the chance to make it last weekend and now I wonder why I waited so long. The recipe can be found here. I used yellow onion instead of scallions and I also used one can of pinto beans and one can of black. Tony prefers pinto beans, and I have gotten to where I prefer black, so we compromised. :o)

This was the first picture that I took. I realized after taking a picture of it in my plate that it didn't look so hot. It looked like a pile of scrambled up mess.

So, I then decided to take a picture of it in the casserole dish to give you another look. As you see, we had already dug in before this picture. :o) At least you can get a better idea of how yummy it might taste.

The next time I make this, I will be sure to have sour cream on hand! This was the only thing that we cooked and after we sat down to eat, we realized that some rice and/or a Mexican type salad would have been very good with it...oh well. It was delicious and just as good warmed up the next day.

  1. This looks really good! We've made a similar dish before and liked it a lot. yum!

  2. Ooo I just looked up this recipe, sounds good to me! I'm love Mexican food. Did you use Daiya or another brand?

  3. bob barker is vegan?

enchiladas are one of my favorite foods! they always bring back good memories of my family going to our fav restaurant in CA. ttysoon

  4. Yay, this looks great! I'm gathering ingredients to make my first enchiladas in about ten years! Great minds think alike. :-)

  5. Rock on Bob Barker! I've read that he donates quite a bit of money to animal rights/welfare causes, v. cool!

That casserole looks and sounds really delicious. Happy Weekend MIchelle!

  6. Yes like Mexican... and I never seen a enchilada casserole :-)
    it looks nice and easy!

    have a great day

  7. Carissa, I used another brand. None of the grocery stores where I live carry Daiya. I can't remember what the brand was, but I got it at our local Kroger. I'll be sure to let you know the next time I get it.

    Yay for Mexican! :o)

  8. Enchilada Casserole, come on down! That recipe looks like a winner! Thanks for the link.

  9. It's great to find a tasty vegan recipe in a mainstream magazine - this looks good! I like the mix of fritos and tortilla chips.

  10. That looks right up my alley. But mostly I like that it's called "Bob Barker's Vegan Enchilada Bake." How can you pass that up?
