Weekend Eats........

Hey everyone! I've been pretty busy, so I haven't taken the time to blog over the past several days. Here's a few pics of what I've been eating. First up is my favorite....a mango green smoothie. I had to post it, because the bubbles on top look like two eyes and two little nostrils. :o)  Do you see it?
 

Last night I made a sweet potato casserole for two.  I was watching the Food Network channel Sunday and saw Anne Burrell make a sweet potato casserole that sounded so good.  I tried to remember her secret ingredients, so I could make it last night.  I didn't want to make a large batch just in case it didn't turn out good.  It turned out wonderful though.  I loved addition of the citrus!

1 large sweet potato
2 tbs vegan butter
1 tsp cinnamon
juice of one Clementine (Ann used an orange, but a Clementine was all I had)
the zest of one Clementine  (Ann used the zest of an orange)
a splash of almond milk

  TOPPING
1/4 cup old fashion oats (I may have used a little more, I didn't measure...sorry)
1 tbs vegan butter
2 tbs brown sugar
a dash of cinnamon

Peel and chop the potato then boil for about 20 minutes or until tender. Once tender, transfer the potatoes to a bowl and mash with a fork, then mix in the butter, cinnamon, Clementine zest and juice. Add a splash of almond milk if the potatoes are to thick. Transfer mixture to a small casserole dish.
For the topping, put the oats, butter, cinnamon, and brown sugar in a small food processor and pulse until everything is mixed and lumpy. Sprinkle topping over sweet potatoes and bake at 350 for 20 minutes.


I also made a veggie stir fry for supper last night....not the best combo...I know.  It sure was good though.


One night Tony cooked supper and made veggie fajitas.   They consisted of onions, peppers, zucchini, tomatoes, and roasted chickpeas.  They were so good.  This was the first time that I put roasted chickpeas in my fajitas, and it won't be the last.  They were a great addition. Tony is now in charge of making fajitas, he just doesn't know that yet.


I did roast the chickpeas though.  I drained, rinsed, and dried the chickpeas, then put spread them out on a baking sheet.  I sprayed them with a little cooking spray and then sprinkled some chili powder, paprika, and a little salt on them .  I put those bad boys in the oven on 350 and baked them for about 30 minutes.


So far this is my favorite spice blend for the roasted chickpeas. The next day I added the leftover chickpeas to a salad and topped it off with some AWESOME Goddess dressing. I've seen Goddess dressing all over the blog world for a year now, and I just finally bought some the other day. Why do I wait so long to try things.....ugh I have really been missing out by not having Goddess dressing!



We went to Tony's parents house for lunch on Sunday for soup and chili.  She made some vegetable soup just for me.  :o)   She sent some home with me, so I added some kale to the leftovers for supper that night.  It had all kind of veggies in it.  Very Very good!  And, I have no idea why the picture ended up posting turned the wrong way.

Mexican, Almond Cookies, and ILVTOFU

Happy HUMP day!  Last night we had Mexican food for dinner.  I made tostadas with re fried beans,  Fantastic Foods Taco Filling, lettuce, and tomatoes.  I also made some Mexican rice to go along with it.  To make the Mexican rice, I mixed in some taco seasoning and several packets of mild taco bell sauce into some cooked brown rice and fried it a bit....very yummy!  I was very disappointed as I was went to the frig to get some Daiya cheddar cheese out.  When I opened the brand new package it was all molded inside...BLEH!  I looked at the expiration date, and it still had 2 weeks left before it expired.  Have you ever had that to happen to you before?  Since I didn't have any cheese, I just sprinkled some nutritional yeast on top, which turned out to be good.  Tony seemed to enjoy his dinner as well.   He did use a little "real" cheddar cheese on his....just a little  :o)  


Last night when I got home from work I made Aimee's Leftover Almond Pulp Cookies, which were fantastic.  They aren't sweet at all, and have such a unique taste about them.  I love the fact that these are so healthy.  I tripled the recipe though, and I did leave out the pistachios, because I didn't have any.  I also made the cookies three different ways.  I made a few with dried cranberries as Aimee did, a few plain ones, and a few with  carob chips in them.  You can find her recipe here.


For lunch I had a Chik'n patty sammy on some Ezekiel 4:9 bread with some of my homemade dill pickles and Dijon mustard on it.  Along with that I had some whole grain pita chips.  Yes, a very boring lunch.  I wasn't feeling so hot this morning.  For some reason, my stomach has been burning the last few days and it wasn't at it's best this morning, so I decided I might just need a sandwich for lunch.  I also only ate a piece of toast and jelly for breakfast along with some stomach ease tea (which tasted nasty)!   I made myself drink it though.


I just had to share this license plate with you also.  This license plate made it on our local news last night, because the state of TN denied this personalized plate to a woman who lives in Murfreesboro TN.  They said it was vulgar....what????   Yeah, their interpretation of the license plate was not to say "I love tofu"....ugh.  They even interviewed some people to see what their take was on the personalized plate and the crazy people of TN also thought it was meant to be vulgar (eyes rolling).  Anyway, the woman just happens to work for PETA (who totally has her back), so she just might end up with the plate after all...we shall see.  Go here if you want to read a little more on it.  I just thought it was funny and ridiculous, so I had to share it.

Giveaway Winnings and More......

Happy Friday!!!  When I got home yesterday I had a package sitting on the table that came in the mail.  It was some goodies that I won from Sarah over at This Is What I Eat.   Her giveaway was for some homemade treats, which I am always happy to receive.  Shen over at The Shenandoah Vegan had requested Sarah's Half Baked Truffles, so there was 2 cute containers of those, and 2 cute little boxes of Mexican Hot Chocolate Snickerdoodles.  Sarah also sent a sweet cupcake card along with her fantastic goodies.  Shen, thank you so much for requesting those truffles....OMG...I've never had a truffle that good.  Sarah, can you please send me some more?????   :o)   I ate one right away, and thought that I had died and gone to heaven....they were soooo good!  I decided to be a sweet wife and let Tony have one.   He was blown away that they were vegan....score!!  :o)   Later after supper I had a cookie, which was also fantastic, but I have to say...those truffles can NOT be beat.  After I ate the cookie I had another truffle.  :o)   I will be making some of the truffles...for sure.  Sarah, thank you so much!!!   Your goodies rock!



Yesterday for breakfast I decided that I needed to try the Iron Woman Gingerbread Smoothie that Maud over at FoodFeud blogged about the other day.  It was soooo good.   You've got to try it!


Wednesday night I made nachos with HH's Nacho Cheese Sauce.  This is the best homemade cheese sauce that I've had so far, hands down!  I couldn't stop eating it.  The nachos were so good that I had the same thing for lunch yesterday.  My nachos consisted of tortilla chips (of course), black beans, corn, tomatoes, jalapenos, and nacho cheese sauce...total yumminess!  I also had some Mexican rice on the side that Tony made.


Last night for supper I made pizza.   Surprised?  You know I have to eat pizza at least once a week.  :o)  I used Whole Wheat Naan bread for the crust.   I used some of the left over Nacho Cheese Sauce for my cheese, and added some spinach, pink lady tomatoes, yellow yummy bell peppers, and some black beans.  I hesitated about adding the black beans, but I'm glad I added them.  Great pizza last night!


For my afternoon snacks this week I've been having a handful of this trail mix that I made up the other day.  It has cashews, almond slices, walnuts, carob chips, dried cranberries, and some shredded coconut in it.   A handful of the trail mix in the afternoons hits the spot and actually holds me over until supper time.  What all do you put in your trail mix?


Maggie had the right idea this morning. She wasn't getting out of her bed for anything...not even to see me off to work.  Her little sleeping buddy is Flipper.  :o)  I really don't see how she can breathe with her nose buried down into her blanket like that, but she does.  Anyway....I was jealous of her sleeping in this morning.

What I've Been Eating This Week.....

Happy Thursday!   Here are a few things that I have been eating this week.  The absolute best was what I cooked for supper last night.  I had Mexican and it all came from my Happy Herbivore cookbook.  First up were these amazing Chili-Lime Corn Chips.  They were made from corn tortillas and seasoned with garlic powder, chili powder, salt, and lime zest.  Lime juice was also squeezed over the chips right before they were served.  I had a feeling these were going to be good, but I had no idea how good.  These chips were awesome.  I think these would be a big hit at a party.


After I made the chips, I made the HH's loaded nachos.  The nachos called for tortilla chips, tomatoes, onion, corn, black beans, jalapenos, olives (I left these out, because I don't like em), nacho cheese sauce, and sour cream.   Lindsay has a nacho cheese sauce and a quick queso sauce in her cookbook.  I decided to try the quick queso instead of the nacho cheese sauce and it was delicious!   The queso over the corn/bean mixture just made the nachos.  I left off the sour cream too.  She has a recipe for that in her cookbook also, but I just wasn't in the mood for sour cream last night.  I did squeeze a little lime juice over the top of the nachos before I dug in though, which was da bomb!   Forget eating Mexican out.  I had much rather have these nachos, which were so easy to whip up.  Making the chips took the longest.  If you use store bought chips you could be eating this in less than 30 minutes.  Now that's what I'm talking about.  :o)


Tuesday night I made a personal pizza out of pita bread, some left over spaghetti sauce, veggie cheese, chorizo, spinach, and tomato with some salt and basil sprinkled on top.  I also decided to finish off some asparagus before it ruined.  I'm working on cleaning out the frig and have almost succeeded.  It's now time to go grocery shopping again. 


Monday night I had a salad.


Monday morning I had a smoothie.  I've been making very simple smoothies lately, because I've been working some overtime.  I opted to go into work early instead of staying late, so that doesn't leave me much spare time in the mornings.  This smoothie was so good!  Here are the ingredients. 

1 1/2 cup soy milk (or any non-dairy milk)
1 scoop Chocolate Amazing Grass
1/2 scoop protein powder
1 frozen banana
1 cup frozen cherries.

Throw it all in the blender until smooth and creamy.  Poor it in a glass and run out the door.  :o)  
I've never been a real big fan of cherries, but they make the best smoothies!  I am now a fan of cherries...frozen ones at least.

Partial Raw...Day 4

I hope everyone is having a great weekend. I just wanted to give an update on how my partial raw day was going for a Saturday.

First, for supper Friday night I made some black eyed peas and collard greens. I added a little chopped onion, one clove of minced garlic, salt, pepper and 1/4 teaspoon of garam marsala. I would have added more garam marsala, but I was cooking for my mom too, and she doesn't like spicy foods. I also sauteed some asparagus in a tad of olive oil. I then added some Herbamare and lemon juice. The purple stuff on my plate is a purple sweet potato. I cubed the potato up and then boiled it. After the potato was done, I drained the water and added a little coconut milk and cinnamon. It was okay, but was lacking something...not sure what though.

Friday when I got home, I had this new book waiting on my doorstep for me. It was recommended by Maud at Food Feud. I wanted a simple raw book to start out with, and this one is perfect. Now I just need to get some raw nuts, so I can make some of the awesome sounding recipes in this book. :o)

Of course for breakfast this morning I had another smoothie. This one was a remake of yesterdays with one adjustment....no frozen mango. YUM!

For lunch today I had banana almond butter mash. I'm not posting the picture, because it looked pretty nasty. I've been busy today doing house work, and didn't want to take the time to make a salad or wrap. So, I just decided to take a banana and mash it up with some almond butter to tide me over till supper. I wasn't really that hungry anyway, but I did need a boost for more energy.

For supper I made burritos. My burrito consisted of a spoon full of left over spinach/mushroom risotto (I know...sounds odd, but was great), refried beans, sauteed mushrooms, bell peppers, lettuce, guacamole, and a sprinkle of vegan cheese. I think that's all I wrapped up in the whole wheat tortilla. It was so good. I think it's the best burrito that I have made so far. I was trying to recreate the one that I had at Tulum's a week or so ago. I almost nailed it. :o) I had some more guacamole and homemade green tomato salsa on the side with some chips. A very yummy supper.

Tomorrow will be much healthier in eating raw. :o) I hope you have a great rest of the weekend!

2 Year Anniversay and Peanut Butter Cookies

Hello everyone! Yesterday was mine and Tony's 2 year anniversary...woohoo. It doesn't seem like we have been married that long....time sure does fly! Anyway, since it was our anniversary, we went to Memphis (about an hour away) and went to Whole Foods. Don't laugh...that's where I wanted to go, because I don't get there very often. :o) As you can see from the picture below, I bought quite a bit of stuff. Those are purple sweet potatoes. Has anyone ever had them? We had never seen them before, so needless to say, we had to get a couple. Now we just need to figure out the best way to cook them. Any suggestions?



As we were in whole foods I came across some Kombucha. Okay, so that stuff is a little on the expensive side, but I had to try it. I've seen several bloggers drinking it, so I wanted to try it. The funny part about this is that I didn't read everything on the bottle before opening it.



See where it says "Do NOT Shake"? Well apparently it says that for a reason. It had stuff sitting in the bottom of the bottle, so my inner self told me to shake it up, so that's what I did. Big mistake! As we were leaving Whole Foods, I shook it up (pretty hard) and decided to open it....in the car. Oh my, talk about an eruption. Thank goodness I was fast to twist the top back on tight, or I would have been in serious trouble for making a mess in Tony's car. It took like 15 minutes of slowly trying to open it back up to be able to drink it without it wanting to spew everywhere. The lesson learned here is to read about new products before trying to consume them. On the very positive side of this.... the Kombucha tasted awesome....I want more! Tony even drank half of it. :o)


We had planned on staying in Memphis to eat, but when we left Whole Foods neither one of us was hungry, so we decided to just head back to Jackson. When we got back to Jackson, we decided to go eat at the Old Town Spaghetti Store. I don't think I have been there in almost a year. I know I hadn't been since I became a vegan. I had a "make your own" pasta dinner. I ordered some whole wheat angel hair pasta with a mushroom sauce and added some spinach. It was fantastic! I didn't have my camera, so I took a picture of it with Tony's phone. What you see in this picture is about how much I brought home. I ate and ate, but didn't seem to get anywhere. I had enough leftovers to make two more meals. :o)



I'm going to rewind a bit more to the weekend. Friday night I had leftover veggie pot pie, sweet potatoes and some roasted corn that Tony made. I'm going to hold off on giving you that recipe because it needs a little tweaking. It was still good though. Those are two sweet pickles(gherkins) on my plate also. I do NOT like sweet pickles and my lovely husband put them on my plate and told me to eat them with my other food. He did this because that's what I do to him....lol

Saturday night we had Mexican. I sauteed an onion, red and green bell pepper, and a couple of cloves of garlic (minced) in some olive oil to go on top of my bean tostada. Tony cooked some Mexican rice, while I tried to salvage as much of an over ripe avocado as I could, so I could make some guacamole. The guacamole that you see on my plate is all that I was able to make, because most of my avocado had ruined. Have you ever gotten a tree to grow from the avocado pit? We keep trying, but we haven't had any luck yet. We stuck 3 toothpicks into the fattest part of the pit and filled a glass with water. We then let the tooth picks rest on the rim of the glass with the bottom of the pit sitting in water...about an inch deep. I'm wondering if maybe it's not getting enough sunshine.

Saturday afternoon I made some peanut butter cookies, which turned out very good. I liked the ones with chocolate chips in them the best. :o) Tony requested that I put a pecan on top of a few for him.


2 cups whole wheat pastry flour
1 teaspoon baking soda
3/4 teaspoon salt
1 cup peanut butter
3/4 cup brown rice syrup
1 teaspoon vanilla
1/4 cup safflower oil
1/4 cup almond milk
turbinado sugar, for sprinkling before baking

Preheat over to 350. In a medium bowl combine the flour, baking soda, and salt. In a larger bowl combine the peanut butter, syrup, oil, and vanilla. Stir until combined and pour the four mixture over the peanut butter mixture and mix well. Shape cookie dough into balls and then place on a nonstick cookie sheet. Press down on the dough balls with a fork making a criss cross design. Sprinkle with turbinado sugar and bake for 10-12 minutes at 350. Let cool for 5 minutes on the cookie sheet, then transfer to a cooling rack to finish cooling.

Not much time for cooking....

Happy Monday! Have you ever been so busy that you didn't get to cook for several days? After those days have passed, do you look back and try to figure out what you actually did, but really can't seem to figure out what took so much of your time? That's how the last several days have been for me.

I have decided to go back to college to get my Education degree, so I can teach K-6 in the distant future. I say distant future, because it will take me several years to get my degree. It's been a while since I have taken any college classes, so I decided to ease back into it this semester by taking only one class. I decided to take an online class, which is a first for me. I am a huge procrastinator, so this online class should be an interesting task for me. I work full time, so I am hoping that online classes will work out. I hate the thought of being away from my hubby 3 or 4 nights a week to take classes, hence the online class. I keep telling myself I can do this though and he does too!

Here are a few things that I have eaten over the last few days. I think the best was what I made Friday night. I made some portobello tacos. OMG...these were the best things that I have ever put in my mouth...seriously! All I did was clean, de-stem and slice some portobellos, then put them into a nonstick skillet with a little olive oil and balsamic vinegar. I sauteed them for about 10 minutes then put them in taco shells with steamed spinach and guacamole on top. I had Mexican fried rice, chips, salsa and more guacamole on the side.


Saturday night we had pizza. I never get tired of pizza! Anywho....I used some left over spaghetti sauce for the marinara. My half (right side) of the pizza consisted of vegan mozzarella, sliced Tofurky Italian Sausage, red bell peppers, onions, and portobellos, that were left over from the tacos. Tony drizzled a little olive oil over the top, and then I topped it off with a little dried basil. :o) Very yummy! But honestly...can you ever go wrong with a pizza?


One night we had pasta and a salad. Do you ever use jar spaghetti sauce? We normally make our own sauce, but on this night we didn't have the time. I found some Prego Fresh Mushroom pasta sauce and decided to give that a try. It appeared to be animal free, so I bought it. Here are the ingredients. Tomato Puree (Water, Tomato Paste)Diced Tomatoes in Tomato Juice, Mushrooms, Sugar, Vegetable Oil (Corn and/or Cottonseed and/or Canola)Salt, Spices (Basil, Oregano, Spice)Dehydrated Garlic, Onion Powder, Citric Acid, Dehydrated Parsley and Flavoring. It was very good for "jar"sauce. This is what I used for the pizza marinara also. I think I'll always keep a jar of this in the pantry for another "just in case we're in a hurry" time. The salad was made up of leafy green lettuce, shaved carrots, dried cranberries, broccoli, sunflower seeds and pepita seeds, which I finally found at the grocery store the other day. For the dressing I used Newman's Own Cranberry Walnut. I think this is my favorite store bought dressing!


Hopefully I will have a little more control over my time now, so maybe I will be cooking from my new cookbooks this week...just maybe. :o)

Enchilada Casserole

Happy Friday! Do you like Mexican food? If so, then you will love this! I actually made this last weekend, but other foods and recipes seemed to push their way in front of this yummy enchilada casserole. I actually found this recipe a couple of months ago, and have been dying to try it. I finally got the chance to make it last weekend and now I wonder why I waited so long. The recipe can be found here. I used yellow onion instead of scallions and I also used one can of pinto beans and one can of black. Tony prefers pinto beans, and I have gotten to where I prefer black, so we compromised. :o)

This was the first picture that I took. I realized after taking a picture of it in my plate that it didn't look so hot. It looked like a pile of scrambled up mess.

So, I then decided to take a picture of it in the casserole dish to give you another look. As you see, we had already dug in before this picture. :o) At least you can get a better idea of how yummy it might taste.

The next time I make this, I will be sure to have sour cream on hand! This was the only thing that we cooked and after we sat down to eat, we realized that some rice and/or a Mexican type salad would have been very good with it...oh well. It was delicious and just as good warmed up the next day.

Tostadas with Taco Filling

Happy Friday!! :o) Who eats Fantastic World Foods Taco Filling? I do, and it's one of my favorite prepackaged meals. I don't eat it very often, because of all the sodium in prepackaged products, but when I splurge, it usually ends up being this.

So, last night for dinner WE had (yes, Tony ate it too) tostadas. First layer was refried beans, then taco filling, then came the vegan cheese, lettuce, vegan sour cream, and finally the salsa. We had them with a big side helping of Mexican rice. It was so good that I brought leftovers to work today and made myself a burrito. I was going to take a picture of it, but I was too hungry to get the camera out. One of my favorite Mexican places to eat is Moe's. I have to say, the burrito that I made for lunch gave Moe's a run for their money. :o)

The 2nd part of my cooking for last night was Apple muffins. Don't they look yummy? Well, in this case, looks are deceiving! The 15 muffins that I made were NOT good! That's right, I ended up with 15 terrible tasting muffins. You win some and loose some...right?

Looks like we have a very busy weekend planned, so I don't have much room for new recipes. I am hoping to get one or two squeezed in somewhere though. I hope everyone has a great weekend!

Tacos and a Veggie Wrap

It's hard to believe that it's already Wednesday! As you can see, I changed my blog up a little. I was getting tired of the brown. I decided I wanted something a little more cheerful and brighter. :o)

Last night for dinner we had tacos. Tony has been wanting some plain ole regular tacos, so that's what we had last night. Here's my version of a taco. It may sound like an odd concoction, but it turned out great! I was amazed at how much it tasted like a real (meat) taco. I had some soy chorizo left in the refrigerator from a week or so ago, so I took that and mixed it up with some refried beans that I had just made. I combined some of the beans and the chorizo together in a small non stick skillet. I added about 2 tablespoons of enchilada sauce to the mixture and cooked it over medium heat for about 5 minutes. That was my taco filling. I stuffed a couple of taco shells with the chorizo mixture then added some vegan cheddar cheese, lettuce and topped that off with some homemade salsa...YUM! We had Mexican rice, chips and guacamole to go along with the tacos. I still haven't mastered a Mexican rice recipe yet. It seems like it should be so simple, but my rice always wants to clump together...any suggestions? I thought about cooking the rice the night before the next time...hmmmm



I went to the grocery store yesterday after work, so I now have veggies in the house again....YAY. With that being said, I made a veggie wrap this morning for my lunch today. I bought some whole wheat flatbread, which I haven't bought in a long time. The flatbread makes great pizzas also. Anyway, back to the wrap. In my wrap, I had guacamole, shredded carrots, two collard green leaves, bean sprouts, sliced cucumber, green and yellow bell pepper and a Roma tomato. All those veggies piled up pretty fast. I was beginning to think that I might not get it wrapped up since the veggies were piled so high.



The wrap was a success though. I have to admit that the thought of eating raw collards weirded me out a little. I managed to work past that though, and it turned out good! I think some oil and vinegar would have been a great addition to the wrap. I don't know why I didn't think about that this morning. Oh well, I did need something salty go along with the wrap, so I threw in some pretzels for my side item. :o)



Okay, here is my great find at Kroger yesterday. I've been seeing people mention this dark chocolate peanut butter on their blog, and I have really been wanting to try it. I finally found it yesterday, and I can NOT believe that I have been with out it for so long!


The label says it all....Dark Chocolate DREAMS! :o)

Tostadas with Homemade Salsa and Guacamole

I hope everyone is having a great Thursday! Last night for dinner we had tostadas. I had some corn tortillas at home, so I used those to make our shells. I put a little olive oil on each side of the tortilla, then sprinkled them with a little salt and cumin. I put them in the oven on 350 and baked them for about 10 minutes or until the bottoms started turning brown. Once the bottoms were brown, I turned the broiler on to get the top slightly brown. You have to stay right with them, and keep an eye on them, or they will be burned before you know it. I probably only had the broiler on for a minute, and the shells were ready to take out. I'll take these shells any day over the store bought ones!



I cooked some canned, organic pinto beans, then mashed them to use as refried beans. I topped the beans off with some homemade salsa, lettuce, our home grown Roma tomatoes (peeled and chopped), homemade guacamole, and some of my cashew cheese. I am happy to say that Tony had a vegetarian meal last night. It would have been vegan if he would have left off the real cheese. :o) I do believe these tostadas were better than the ones I made the last time.



Here's my salsa recipe:
1 (14 1/2 ounce) can tomatoes and green chilies (rotel)
1 (14 1/2 ounce) can diced tomatoes
4 green onions (chopped)
3/4 teaspoon garlic powder
1/2 teaspoon cumin
1/2 teaspoon salt
pinch of sugar
2 tablespoons fresh cilantro (chopped)
1/2 lime (juice)

In a food processor, process the onions and cilantro for a few seconds. Add both cans of tomatoes, garlic powder, cumin, salt and sugar. Process all the ingredients until well blended. Pour into a bowl and mix in the lime juice. Cover and place in the refrigerator until you're ready to eat.


I made some simple guacamole last night. It was just enough for two people, but I still had a little left over, which was just enough for my sandwich today. I used one avocado, one green onion one Roma tomato, 1/2 lime (juice), salt and pepper to taste. My husband used to beg me to try guacamole when we would go out to a Mexican restaurant and that just wouldn't happen. Finally, one day I gave in and tried it, but still didn't care for it. Every time we would go out to eat Mexican, I would try it again. I started liking it a little more each time, now I LOVE it!


I had a strawberry banana smoothie for breakfast this morning that was not very tasty. Tony ran by the store yesterday to pick up some bananas, but all they had were green ones....I mean GREEN bananas. I never thought that a green banana could change the taste of a smoothie, but it did! I managed to drink it all, but it was NOT the best! Hopefully the bananas
will be more ripe for tomorrow. I put them in a paper bag to help them ripen faster. :o)
