Partial Raw...Day 4

I hope everyone is having a great weekend. I just wanted to give an update on how my partial raw day was going for a Saturday.

First, for supper Friday night I made some black eyed peas and collard greens. I added a little chopped onion, one clove of minced garlic, salt, pepper and 1/4 teaspoon of garam marsala. I would have added more garam marsala, but I was cooking for my mom too, and she doesn't like spicy foods. I also sauteed some asparagus in a tad of olive oil. I then added some Herbamare and lemon juice. The purple stuff on my plate is a purple sweet potato. I cubed the potato up and then boiled it. After the potato was done, I drained the water and added a little coconut milk and cinnamon. It was okay, but was lacking something...not sure what though.

Friday when I got home, I had this new book waiting on my doorstep for me. It was recommended by Maud at Food Feud. I wanted a simple raw book to start out with, and this one is perfect. Now I just need to get some raw nuts, so I can make some of the awesome sounding recipes in this book. :o)

Of course for breakfast this morning I had another smoothie. This one was a remake of yesterdays with one adjustment....no frozen mango. YUM!

For lunch today I had banana almond butter mash. I'm not posting the picture, because it looked pretty nasty. I've been busy today doing house work, and didn't want to take the time to make a salad or wrap. So, I just decided to take a banana and mash it up with some almond butter to tide me over till supper. I wasn't really that hungry anyway, but I did need a boost for more energy.

For supper I made burritos. My burrito consisted of a spoon full of left over spinach/mushroom risotto (I know...sounds odd, but was great), refried beans, sauteed mushrooms, bell peppers, lettuce, guacamole, and a sprinkle of vegan cheese. I think that's all I wrapped up in the whole wheat tortilla. It was so good. I think it's the best burrito that I have made so far. I was trying to recreate the one that I had at Tulum's a week or so ago. I almost nailed it. :o) I had some more guacamole and homemade green tomato salsa on the side with some chips. A very yummy supper.

Tomorrow will be much healthier in eating raw. :o) I hope you have a great rest of the weekend!

  1. That raw cookbook looks wonderful. I just checked my library and reserved it online, so I can't wait til I get it and try some of the recipes. Hopefully you will share with us some of your adventures with this cookbook. I am getting a little tired of salads for lunch :)

  2. Oh good you got the book! I was just going through mine again for ideas for the net few days, and I really do like it.
    That smoothie looks awesome - I've only just rekindled my love of kiwi, and it's really refreshing.

  3. i put all sorts of stuff in burritos:) you arent alone:) is that all you ate in one day? i think id still be hungry! cant wait to see what you make out of that book.glad you are having fun with raw foods!

    I had a green smoothie for breakfast and dinner..

  5. You are eating really well! I hope that the book will give you lots of ideas, otherwise I have a few idea in my Raw 'Energy' section on the Vegan blog, (which I am slowly building up, Better add more recipes soon...).

  7. I just made black eyed peas, but I forgot that I wanted to try them with garam masala. I really want to remember that next time - it sounds so good!

    Your burrito does sound good, and if you said spinach/mushroom rice instead of risotto it wouldn't be weird at all.

  10. The burrito sounds loaded with yummy stuff. I often put rice on burritos, so risotto doesn't seem that odd. :) I'm looking forward to seeing what you make from your new cookbook!

    Maud - I haven't had kiwi in a long time until this past week. I'm loving it in the smoothies right now. I really like that cookbook! Thanks for the recommendation. :o)

    Michelle - That's all I ate all day. Normally I would starve one a diet like that. Not sure what got into me...

    Debra - I need to check out her dvd...green smoothies rock!

    Alessandra - I'm going to go check out your raw "energy" section. I don't guess I ever noticed that. Thanks for pointing that out for me. :)

    Jessica - yep...you've got to remember to add the garam marsala to the black eyed peast the next time....very good!

    Rose - I guess burritos are endless as to what you put in them. Every time I make them, they always end up different. :)
