Enchilada Casserole

Happy Friday! Do you like Mexican food? If so, then you will love this! I actually made this last weekend, but other foods and recipes seemed to push their way in front of this yummy enchilada casserole. I actually found this recipe a couple of months ago, and have been dying to try it. I finally got the chance to make it last weekend and now I wonder why I waited so long. The recipe can be found here. I used yellow onion instead of scallions and I also used one can of pinto beans and one can of black. Tony prefers pinto beans, and I have gotten to where I prefer black, so we compromised. :o)

This was the first picture that I took. I realized after taking a picture of it in my plate that it didn't look so hot. It looked like a pile of scrambled up mess.

So, I then decided to take a picture of it in the casserole dish to give you another look. As you see, we had already dug in before this picture. :o) At least you can get a better idea of how yummy it might taste.

The next time I make this, I will be sure to have sour cream on hand! This was the only thing that we cooked and after we sat down to eat, we realized that some rice and/or a Mexican type salad would have been very good with it...oh well. It was delicious and just as good warmed up the next day.

  7. Carissa, I used another brand. None of the grocery stores where I live carry Daiya. I can't remember what the brand was, but I got it at our local Kroger. I'll be sure to let you know the next time I get it.
