Maggie wanted to say Hi to everyone! This is how she sits every night while I am cooking supper. She is staring into the kitchen as I cook. Do you suppose she is hungry? It seems like as more time passes she ends up sitting mostly on her back. She gets spasms in her back legs and they will just pop up in the air. Poor baby! The vet said the spasms are because the nerve around her tail bone is getting pinched and as it becomes more inflamed it causes spasms. :(
Last night for dinner I made some scrambled tofu and it was yummy! I sauteed 1/2 bell pepper (chopped), 1 celery stalk (minced), 1/2 onion (chopped), and 2 cloves of garlic (minced) in some olive oil for about 10 minutes. After about 10 minutes, I added a portobello mushroom (chopped), drained firm tofu, 2 tablespoons of soy sauce, 1/2 teaspoon of turmeric, 1/4 teaspoon of cumin, and enough salt and pepper to taste. After that had cooked for about 10 minutes I added a little nutritional yeast and cooked it a little longer. I can't get over how much it actually looks like scrambled eggs. :o)
There's another giveaway that you can get in on too over at LaceyLovesFood. She is giving away a copy of The Happy Herbivore. I've heard it's a great cookbook. It's actually the next cookbook that I hope to get. :o)

You've been around! It's so much fun seeing everyone's maps. Hopefully we both get to all the states eventually!
ReplyDeletePoor Maggie. :( Did the vet suggest anything that you can do to relieve her discomfort?

You've got the southern states covered, and well on your way to all 50!
ReplyDeleteGive cute Maggie a big hug from me. Your scramble looks delish.
Oh, I'm so sorry Maggie has to be in such pain to be so darn cute. By the way, what is the dark green veggie in your scramble?
ReplyDeleteLooks delicious. I find that exercise is the best remedy for pinched nerves/spasms.
ReplyDeleteI'm missing NC from my southern states map, too. And I hope as you learn what's paining Maggie you can help her feel better.
ReplyDeleteI love scrambled tofu for supper! Yours looks great with all those veggies mixed in.
Molly, the vet has Maggie on Rimadyl for the inflammation. I also give her pet health. The winter months seem to be harder because she's not outside to get much exercise. She doesn't like the cold. :o)
ReplyDeleteBlessedmama, the dark green veggie is frozen spinach...I was all out of fresh. :(
