Here's Looking at the Weekend....

Happy Friday everyone!  See the excitement in Maggie's eye that this is Friday.  :o)

Maggie doesn't know that she'll be home by herself most of they day Saturday though.  :(   We are taking a motorcycle ride with some other couples tomorrow in this terribly hot weather.   This was the temp on my way home at 5:30 Thursday...now that's just too darn hot!  I hope it's not this hot tomorrow.

So, what do you do when it's so hot out?  You cool off with this yummy smoothie that I made with flavored coconut water.  This is by far one of my favorite smoothies.   I made this one with acai / pomegranate coconut water.

Beat The Heat Smoothie

1 frozen banana
hand full of frozen mango chunks
3 tablespoons hemp seeds
1  11.2 oz container Vita Coco Acai & Pomegranate coconut water

Throw everything into the blender and blend until smooth and creamy.  This smoothie didn't last long at all.  I think it was gone in 5 minutes.  Usually my smoothies last about 30 minutes, because I drink them on the way to work.

This week was the first time that I've tried the flavored coconut waters, and I have to say...I'm lovin em!

Last night for supper we made spaghetti. All the veggies we used came out of our garden except for the mushrooms.  I had a few mushrooms left over from making a stir fry the other night, so I threw them into the mix.  Fresh tomatoes, roasted peppers (left over from our grilling the other night), and fresh basil....talk about yummy.  This was one of the best pasta dishes that I've had in a long time!  Of course I did add some red wine, olive oil, minced garlic, salt and pepper.  :o)

Wednesday night we had hot dogs.  When I was at Kroger over the weekend I found some Smart Dogs.  I was so excited when I saw them.  I know that's crazy, but when you live in a place where vegan foods like this are rare to come by, you get excited when you see them.   This particular Kroger has added several new vegan products, which is great since I don't get to make the 1 hour trip to Whole Foods very much.  Don't laugh when I tell you this, but this was the first time that I've ever put sauerkraut on a hot dog, and it won't be the last.  I've never had a hot dog that tasted so good....total deliciousness!  Tony sliced some potatoes and made us some french fries, and I made some of Elise's Fry Sauce (thanks to Shen).

I hope you have a great weekend!  Everyone try to stay cool.

  1. I love the close-up of Maggie's eye. :)

We took a ride on our scooters to run some errands today & it was nice. The only thing I never liked on warm days was how sweaty my head would get from my helmet. 109 degrees is pretty brutal!

I've had sauerkraut on Smart Dogs before & love it, especially with a sauce I make from mixing bbq sauce & Vegenaise together. It's so good! We've been wanting to have a fire in our yard to roast some, but it's been too hot, muggy and buggy for that.

Oh, and I get excited when I find things here, too. Thankfully we have Milwaukee relatively close.

  3. Sauerkraut is probably my favorite dog topping too - with lots of mustanrd. I love the flavored coconut waters but I don't usually put them in my smoothies since they're kind of expensive and don't add too much taste.

  4. Your Spaghetti looks pretty damn good. Great idea adding coconut water to the smoothie. I never would've thought of that.

Mr. SV has six bikes (3 Moto Guzzies, 1 Ducati, 1 BMW & 1 Harley). I'm guessing Tony is a Harley dude?

  7. I hope you had a great weekend - it is hot to be out on the pavement!

So glad you could find a smart dog, and dress it up right. It seems like lots of these products are sneaking into smaller Krogers.

  9. Molly, I know you guys are having so much fun on your scooters. :o) Your sauce that you put on your smart dogs sounds great...I'll have to try that.

Thanks Rose, I think I'm hooked on coconut water right now.

Maud, you're right about coconut water not being cheap. I just happen to get lucky and find it on sale at Kroger. The acai/pom one has a lot of flavor....to me anyway. :o)

Shen, Wow, Mr. SV has a nice collection. I named them off to Tony and he went crazy...ha. He used to ride nothing but Harley's, but this last bike he bought was a Yamaha Roadstar. He likes it, but I think he's wanting another Harley. :o) Do you guys ride much?

    Thanks Simply Life!

Alessandra, you need to try it...it's good. :o)

Thanks Jessica! Maybe Kroger will keep adding things...I sure hope so.

Thanks Jenny. I know...I never would have thought that I would be getting excited about finding food.
