Mexican, Almond Cookies, and ILVTOFU

Happy HUMP day!  Last night we had Mexican food for dinner.  I made tostadas with re fried beans,  Fantastic Foods Taco Filling, lettuce, and tomatoes.  I also made some Mexican rice to go along with it.  To make the Mexican rice, I mixed in some taco seasoning and several packets of mild taco bell sauce into some cooked brown rice and fried it a bit....very yummy!  I was very disappointed as I was went to the frig to get some Daiya cheddar cheese out.  When I opened the brand new package it was all molded inside...BLEH!  I looked at the expiration date, and it still had 2 weeks left before it expired.  Have you ever had that to happen to you before?  Since I didn't have any cheese, I just sprinkled some nutritional yeast on top, which turned out to be good.  Tony seemed to enjoy his dinner as well.   He did use a little "real" cheddar cheese on his....just a little  :o)  


Last night when I got home from work I made Aimee's Leftover Almond Pulp Cookies, which were fantastic.  They aren't sweet at all, and have such a unique taste about them.  I love the fact that these are so healthy.  I tripled the recipe though, and I did leave out the pistachios, because I didn't have any.  I also made the cookies three different ways.  I made a few with dried cranberries as Aimee did, a few plain ones, and a few with  carob chips in them.  You can find her recipe here.


For lunch I had a Chik'n patty sammy on some Ezekiel 4:9 bread with some of my homemade dill pickles and Dijon mustard on it.  Along with that I had some whole grain pita chips.  Yes, a very boring lunch.  I wasn't feeling so hot this morning.  For some reason, my stomach has been burning the last few days and it wasn't at it's best this morning, so I decided I might just need a sandwich for lunch.  I also only ate a piece of toast and jelly for breakfast along with some stomach ease tea (which tasted nasty)!   I made myself drink it though.


I just had to share this license plate with you also.  This license plate made it on our local news last night, because the state of TN denied this personalized plate to a woman who lives in Murfreesboro TN.  They said it was vulgar....what????   Yeah, their interpretation of the license plate was not to say "I love tofu"....ugh.  They even interviewed some people to see what their take was on the personalized plate and the crazy people of TN also thought it was meant to be vulgar (eyes rolling).  Anyway, the woman just happens to work for PETA (who totally has her back), so she just might end up with the plate after all...we shall see.  Go here if you want to read a little more on it.  I just thought it was funny and ridiculous, so I had to share it.

  1. I had to stare at the license plate for a long time to figure out how it could be vulgar. I finally got it. How ridiculous are they? THEIR minds are in the gutter. Not hers. ITS TOFU!!!!! I hope she gets it and then puts a bunch of vegan bumper stickers on the back of her car too.

  2. Haha! I saw a similar story from another state that also denied someone a plate with ILVTOFU for the same reason! I bet Tennessee had heard about that immediately thought this one was dirty. Haha!

    I love that Fantastic Foods taco filling, but I haven't bought any in years! I need get some!

    And I haven't had that mold thing happen with Daiya, but I have had that happen with a new carton of Silk Nog that was totally nowhere near expiration, but it was all chunky inside when I opened it. Ick!

  3. We had that happen with a package of Daiya about a month ago. They must have had a bad batch of it. For $7 a bag, we were not happy about that.

    I hope your stomach is feeling better. There's so much crud going around lately!

    I think a similar thing happened in Colorado with the same kind of license plate. Such dirty minds people can have!

  5. Oh, take that Daiya right back to the store and get your money back!

    Your tostada meal looks great and so does the sammy. Sorry your tummy's out of whack...hope it feels better soon. This may sound odd and unappetizing, but sauerkraut always makes my tummy feel better, it has some type of anti-bacterial enzymes or something that work wonders for the tummy. And even though it seems sour, I don't think it's acidic, just fermented.

    I've seen that license plate posted somewhere before too...hilarious!

  9. I totally saw 'I Love Tofu' right off the bat, but whenever you talk about squeezing your nut sack to make almond milk, my mind goes straight to the gutter.

    Molly, I know...that cheese cost way to much to have that to happen. I was so mad! I'm feeling better today. I got your comment about the book too. I'll have to check that out...thanks!

    VaVa, It is pretty funny isn't. People are so crazy! And, thanks...I'm feeling a lot better today. Maybe that nasty tea helped.

    Rose, I love sauerkraut, so I will have to give that a try the next time. I'm feeling much better today...must have been the tea...lol

  11. I love Mexican food - and yes, have found moldy Diaya cheese in the back of my fridge - eeks! I find that happens with Trader Joe's bread too - it's so frustrating when it happens before the expiration date. The healthy cookies also look delish - I enjoy anything with cranberries. :)

  12. Hey Michelle! I think Colleen's book would be great for your husband. A short chapter is intended to be read everyday and each deals with different aspects of vegan nutrition. Plus, there's recipes! Congrats that your husband is trying veganism!! I wish my boyfriend would. I should make him watch Forks Over Knives. :-)

  15. haha, Alessandra, it totally took me awhile the first time I heard this story. My naive mind doesn't always get the dirty joke. I'm curious where Molly buys her Daiya for $7/pk; yikes!

    I've never once had Daiya go bad, and we always buy 6-12 (12 to get the 10% discount at WF) packages at once. We eat a pack within 2 or 3 days, though, and I freeze the extras until we use them. It must have been a bad batch, like she said. I would take it back, too. I feel like I take something moldy back to WF every other trip. It's not that they have a lot of moldy food; it's just the huge amount of food we buy, something natural is likely going to be bad in the group.

    Tostadas are always fun to have.
