Stuffed Portabello Mushrooms

It's hump day already...yay! Last night for supper I made stuffed portabellos and a salad. This supper rocked! I will be making these stuffed shrooms again...that's for sure.
You can't really see the mushroom from all its stuffing, but trust me....it's there. :o)


Here's the recipe......

Olive oil for sauteing
1/2 chopped carrots
1 medium onion (diced)
1/2 cup red bell pepper (diced)
1 clove garlic (minced)
1 teaspoon basil
1 teaspoon oregano
1 cup cooked quinoa
1 tablespoon soy sauce
salt and pepper to taste
Italian bread crumbs (for sprinkling on top)
4 portabello mushrooms

Heat about 1 teaspoon of olive oil in a nonstick pan. Add carrot, onion red pepper and garlic and saute for 5-10 minutes, then stir in basil and oregano.
Remove the onion mixture from the heat and add in the quinoa, soy sauce, salt and pepper.
Remove the stems and gills from the mushrooms and wipe clean with a damp paper towel. Place the mushrooms stem side up in a lightly oiled casserole dish. Fill the mushrooms with the quinoa mixture. Pack the mixture down lightly and sprinkle the tops with bread crumbs.
Bake in a preheated oven at 400 degrees for 20 minutes.

I think these would have been awesome with a little vegan cheese sprinkled on top, but I was all out. They tasted perfect to me just the way they were though.

We went to Wal-Mart on Monday and bought a waffle maker. I've been wanting one for some time now. After being tempted by Food Fueds waffles (they looked so good) the other day, I knew I had to go buy one very soon! We made some plain waffles that night, which were good, but not out of this world. We did top the waffles with some blueberry syrup that we got for Christmas from Tony's mom. That made the plain waffles special. :o) Anyway, now I am on the search for some awesome waffle recipes. Anyone have any suggestions?

  2. I have to hide this picture from Johann or he'll never want to eat anything else again! He loves mushrooms but I need to eat them in small doses. This, however, looks amazing.

    I got a waffle maker (that is also a griller and sansdwhich maker) for Christmas and I really love it. I'm still getting the hang of it (I'm far from the perfect waffle!) so I'm still looking for good recipes too. So far I've used the Vcon's Walnut-Banana recipe sans walnuts but I found the batter to produce waffles that were a bit too mushy. Keep us posted if you find anything good!

  5. Mmm.... waffles and stuffing. The recipe looks really good! We have a waffle maker but haven't used it for a long time. I'll have to bust it out this weekend!

  6. Those stuffed mushrooms sound delish, so full of yummy ingredients. They look wonderful paired with the big salad too.

    A waffle maker. Fun! I've never had one ( a maker, I mean) but I did see a yummy recipe on Cooking in Color where she made hash browns in her waffle maker (here's the link)...sure looked good. I'm looking forward to reading about all your yummy waffle adventures!

  8. Oh, the stuffed mushroom sounds so good! A little quinoa inside sounds great, and your salad looks good too.

    I usually just make plain waffles, or sometimes with pecans. Generally I use the recipe from Vegan Brunch. I used to use a mix but I'm not sure it's vegan and once I ran out I didn't buy more because it's so easy to make them from scratch. If you get more adventurous, I'd be happy to see your results!

  9. I don't own a waffle maker, but if I did, I would try making Blessed Mama's Chocolate Chip Waffles. Her recipes have always worked out well for me.

    Oh...Rose, I checked out that link. My husband is going to flip when he finds out about making hashbrowns in the waffle maker! :o)
