A Little Weekend Grub.....

Heeeelllloooo everyone! I don't have any new recipes to report, because we did a lot of eating out over the weekend. If we didn't eat out, we cooked super fast meals. :o)

Last night I made some fried rice. I used a pack of frozen veggies that SAID it had green beans, broccoli, mushrooms and onions in it. It was mostly green beans with 5 mushrooms (yes I counted them), a lot of broccoli stalks (I picked those out), and just the right amount of onions. I did add some yellow bell pepper to the mix. I thought it needed a little more color. I had a Boca burger to go with it. Oh, for some reason I decided to squeeze some lemon juice on the rice before I ate it, and to my amazement....it was great.

Sunday night I made Falafel, which I hadn't had in a very long time. I had some tater babies to go along with it. I made some dipping sauce for the Falafel and fries, which was the perfect sauce. The sauce was vegenaise and Country Bob's mixed together. Talk about something good....I'm hooked on it now! I didn't measure it, but guessing I would say I used 3/4 cup vegenaise and 1/4 cup Country Bob's.

Friday was my mothers birthday, so we took her out to eat. Her favorite place is Dixie Castle which is nothing but a steak house. I ordered a salad and a baked potato with a side of mushrooms. That's all there was on the menu for me to order. It's a very small place with a very small menu. I used to love to go there back in my omnivore days. Anyway, my salad reminded me of Michelle's over at DirtyDuck. It consisted of shredded iceberg lettuce, 2 slices of cucumber, one slice of tomato, and a slice of onion that I didn't eat.

Here's my potato and shrooms. Oh yeah, I forgot it came with a piece of buttered Texas toast that I passed off to my sister. I ended up putting some of the shrooms on my potato, which turned out to be pretty tasty! The main thing here is that my mom totally enjoyed her birthday dinner! :o) My mom turned 82.....

I don't know why the picture of the potato and shrooms posted like it did. It's rotated the correct way in my pictures, but when I uploaded it to blogger it turned....oh well, at least you get the idea of what it looked like.

I had also taken a picture of my Mexican food from Casa Marina, but it didn't turn out so hot. I opted to leave that off . This weeks going to be a crazy one, but hopefully by the end of the week I will have actually cooked something new. :o) I hope every one is having a great day!

  1. Happy birthday Michelle's Mama! A dinner like that is okay when she gets what she wants. You can also start sneaking in your own vegan condiments and salad toppings ;)

Your falafel and sauce sounds great - I need to get my hands on some Country Bob's. There is one Kroger around here that sells it, but my store doesn't. (I am thinking the city Kroger doesn't sell it, but the country Kroger does!)

  2. Happy birthday to your Mum!!!

Why do you pick the broccoli stalks? I know that the florettes are nicer (trust the frozen packs!) but the stalks also are good for you! :-)

  3. Happy birthday to your mom!

I used to mix vegenaise and bbq sauce together, then put it along with sauerkraut over a veggie burger. It sounds gross but is so good! The sauce you made for the fries reminded me of that. Oh, and that salad does indeed look pretty similar to dirty duck's! lol

  4. thats right, you were a later in life baby:) i would not wish my salad on ANYBODY! im so sorry!!lol. good try with all the sides, sometimes chain steakhouses have a lot of options, but the neighborhood ones (usually) just dont. it was nice to read that you were happy that your mom was happy, very sweet:)

and isnt that sad about frozen veggie mixes? its usually half unedible stuff, i will usually cook them and give them to the various animals running around:) maybe next time you can heat them and chop them up fine to add to your homemade dog food? ...?i dunno, i might feel bad doing that, lol. i DONT feel bad giving them to my pig:) she likes all thats stuff!ttysoon!

  5. Michelle have you found a vegan Boca burger? All the Boca burgers I have found have milk or eggs in them. Their "chicken" patties don't but all the burger ones I can find do. Also - what is Country Bobs??

  6. Happy Birthday MIchelle's Mom! Glad you guys had a nice time.

That Country Bob's mix sounds great! I've been using my Country Bob's sauce and enjoying it immensely. (Posting about it soon).

I'll have to try that dipping sauce next! :)

  7. Happy Birthday to your mom. I hope you rushed home afterward and ate some real grub :) Though, you're right - the mushrooms on a baked potato don't sound so bad.
I wanted to make falafel tonight but had something to do - did you make your own or use a mix?

  8. Jessica, I hope you can find some Country Bob's...I think you will really like it.

Alessandra, There's just something about broccoli stalks that weirds me out. My husband told me the same thing about that part being so good for you. :o)

Molly, ahhhh...vegenaise and bbq sauce...YUM! I never though about putting sauerkraut over a veggie burger. I'll have to try that with the bbq sauce mixture...sounds yummy!

Michelle, it's funny that you mention chopping up the stalks for Maggie. Tony said the exact same thing after I had already thrown them away. I didn't even think about that at the time, and Maggie loves broccoli. :o)

Kylea, I buy the Original Vegan Boca Burgers. They don't have any milk or eggs in them. Check it out http://www.bocaburger.com/products/nutrition-info.aspx?product=5928333445
Country Bob's is a "steak" sauce that we have here in the south. I don't know if they have it where you live or not, but you should look for it around the steak and BBQ sauce section. :o)

Rose, I'm glad you like the Country Bob's. I can't wait to read your post about it. :o)

Maud, I made my own falafel. I used this recipe, which is very easy. http://lovinlivinvegan.blogspot.com/2010/06/baked-falafel.html
I didn't have any fresh herbs this time though so I used dried parsley. I don't really care for the boxed kind. :o)
